  • 3/4 cup milk

The large quantity of powdered sugar gives the filling body and structure so it sets firm enough to handle.

Instructions

  1. In a bowl, combine the powdered sugar and milk, stirring until smooth and free of lumps. The mixture should be thick but spreadable—add a touch more milk if too stiff, or a little more powdered sugar if too runny.
  2. Divide the icing evenly into three small bowls.
  3. To one bowl, add the tablespoon of cocoa and stir until fully incorporated to make the chocolate filling.
  4. To another bowl, add 2–3 drops of red food coloring and mix until you reach a soft pink for the Neapolitan effect. Leave the third bowl plain for the vanilla-flavored center.
  5. Spread a layer of filling on one half of a graham cracker—use roughly a teaspoon to a tablespoon depending on how thick you prefer the filling.
  6. Top with a second graham cracker to create a sandwich, pressing gently so the filling spreads to the edges without overflowing.
  7. Repeat the process alternating flavors until you’ve used all the crackers and fillings, creating a mix of chocolate, pink, and vanilla sandwiches.
  8. Set the assembled sandwiches on a tray and allow the icing to harden at room temperature for a short time so it won’t ooze when eaten. If you’re impatient (as I sometimes am), dig in right away and enjoy the extra gooeyness!

  • If your filling is too stiff, add milk a teaspoon at a time until you reach spreadable consistency.
  • For a natural pink color, substitute a small amount of strawberry puree or freeze-dried strawberry powder for the red food coloring. Reduce any extra moisture so the filling remains thick.
  • Make half the batch chocolate and half plain, or alternate flavors to create a Neapolitan stack for a colorful presentation.
  • For a slightly crunchier texture, break graham crackers into different shapes—squares, triangles, or rectangles—before sandwiching.

Store the sandwiches in an airtight container at room temperature for a few days. If your kitchen is warm, refrigerate them briefly to keep the filling firm; allow refrigerated sandwiches to sit at room temperature a few minutes before serving so the filling softens slightly.
