Instructions

  2. In a medium bowl, combine the chopped tomatoes, diced red onion, minced garlic, chopped basil, olive oil, balsamic vinegar, salt and pepper. Stir gently and refrigerate until ready to serve to let the flavors develop.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the zucchini noodles and sauté for 3–5 minutes, tossing occasionally, until tender but still slightly firm. Divide the cooked zoodles between four bowls.
