Ingredients

  • 1 tablespoon olive oil
  • ½ cup diced onions
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 15 ounce can chili beans
  • 15 ounce can diced tomatoes with green chilies
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons chili seasoning
  • 1 teaspoon apple cider vinegar

Instructions

  • Press the “Sauté” setting on the Instant Pot and select normal heat.
  • When the display reads “hot,” add the olive oil and sauté the diced onions for 3–4 minutes until softened. Add the minced garlic and cook another minute until fragrant.
  • Add the ground beef, breaking it up with a spoon. Cook until the meat is browned and no longer pink.
  • Press “Cancel” or “Keep Warm/Cancel” to stop the sauté function.
  • If desired, use a paper towel to blot excess grease from the pot for a leaner chili.
  • Add the chili beans, diced tomatoes with green chilies, beef broth, Worcestershire sauce, and chili seasoning. Stir to combine.
  • Secure the lid, set the steam release to “Sealing,” and select Manual/Pressure Cook on high for 3 minutes.
  • The cooker will take a few minutes to come to pressure, then cook for the programmed 3 minutes. After the cook time completes, allow a 10-minute natural pressure release, then carefully move the valve to “Venting” to release any remaining steam and remove the lid.
