At a recent “Cox Smart Home” event in Baton Rouge I demonstrated how smart kitchen tools can transform everyday cooking. One of the standout devices was a WiFi-enabled sous vide cooker, which I used to prepare delicious, perfectly cooked sliders ideal for game day or tailgates. The process is straightforward: prepare the patties, cook them in the sous vide, transport them chilled if needed, and then finish with a quick high-heat sear for caramelized flavor.

After the water bath, a short, high-heat sear on a hot skillet or grill develops a flavorful crust without overcooking the interior.

Ingredients

  • 2 pounds ground beef
  • 2 tablespoons Montreal steak seasoning or burger seasoning
  • 1 tablespoon olive oil
  • 12 small slices cheddar cheese
  • 12 Hawaiian rolls

Instructions

1. In a bowl, mix the ground beef and Montreal steak seasoning until evenly combined. Shape the mixture into 12 even slider patties. Chilling slightly helps them keep their shape.

2. Arrange the patties on a foil-lined baking sheet and freeze for about one hour. Freezing briefly prevents the patties from falling apart when placing them into bags for the sous vide bath.

3. Divide the patties into three resealable plastic bags, placing four sliders in each bag. If you don’t have a vacuum sealer, use the water displacement method: seal the bag almost completely, then slowly submerge it in water, allowing the water pressure to push the air out before finishing the seal.

4. Preheat your sous vide to 130°F for medium-rare to medium doneness. For a firmer result closer to medium-well, set the temperature to 138°F. Submerge the sealed bags and cook for 45 minutes to 3 hours. This wide window makes sous vide convenient for busy schedules—food won’t overcook while you attend other tasks.

5. After the cooking time, remove the bags from the water bath, open them, and transfer the sliders onto a paper towel–lined cutting board. Let them rest for 10–15 minutes to settle juices and cool slightly before searing.

6. To finish, heat the olive oil in a cast-iron skillet over high heat (or preheat a hot grill). Sear the sliders for 20–30 seconds per side to develop a brown, flavorful crust. If you prefer, searing on a very hot grill produces similar results. Add a slice of cheddar to each patty during the last few seconds to melt.

7. Serve the sliders on Hawaiian rolls. They’re excellent plain, letting the beef flavor shine, but you can add classic toppings like pickles, tomato, onion, ketchup, mustard, or a favorite burger sauce.

Tips and Notes

  • Use beef with some fat (80/20 or 85/15) for juicier sliders; leaner blends can dry out.
  • The water displacement sealing method works well for home cooks without special equipment—just be careful to seal the bags completely after submerging.
  • Cook time flexibility is one of sous vide’s strengths: you can hold cooked patties in the bath within the recommended window until ready to finish.
  • If transporting to a tailgate, chill the cooked sliders quickly in an ice bath, then refrigerate in sealed bags; reheat in the water bath or on the grill and sear before serving.
