As a food blogger, I get three questions more than any others: how do you earn a living, what’s your favorite recipe, and how do you keep creating new dishes? Tomato Kale Polenta Skillet Ingredients
- 18 oz prepared polenta
- 1/4 cup mascarpone cheese
- 1/4 cup parmesan cheese
- 3 cups kale, chopped
- 2 cups cherry tomatoes
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
- 1/4 tsp black pepper
- 1/4 tsp sea salt
- 2 tbsp fresh basil, chopped

Tomato Kale Polenta Skillet Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, stir together the prepared polenta with the mascarpone and parmesan until smooth and well combined.
- Spread the polenta mixture evenly across the bottom of an oven-safe skillet or cast-iron pan to form a thick base.
- In a separate large bowl, toss the chopped kale, cherry tomatoes, minced garlic, olive oil, balsamic vinegar, salt and pepper until the vegetables are evenly coated.
- Arrange the kale and tomato mixture over the polenta layer in the skillet, spreading it gently so the tomatoes are distributed across the surface.
- Bake in the preheated oven for 25–30 minutes, or until the tomatoes are roasted and the kale is slightly crisped.
- Remove from the oven and sprinkle the chopped fresh basil over the top before serving.

Serve warm straight from the skillet. A big spoonful yields creamy polenta with pockets of melted cheese and bursts of juicy tomato, balanced by the earthy, slightly bitter kale. This dish is hearty enough to be a main for vegetarians but also works as a flavorful side.

Tips, Variations and Storage
If you don’t have mascarpone, cream cheese or ricotta can be a substitute for a similar creamy texture. Swap parmesan for pecorino if you prefer a sharper, saltier finish.
