- To another bowl, add 2–3 drops of red food coloring and mix until you reach a soft pink for the Neapolitan effect. Leave the third bowl plain for the vanilla-flavored center.
- Spread a layer of filling on one half of a graham cracker—use roughly a teaspoon to a tablespoon depending on how thick you prefer the filling.
- Top with a second graham cracker to create a sandwich, pressing gently so the filling spreads to the edges without overflowing.
- Repeat the process alternating flavors until you’ve used all the crackers and fillings, creating a mix of chocolate, pink, and vanilla sandwiches.
- Set the assembled sandwiches on a tray and allow the icing to harden at room temperature for a short time so it won’t ooze when eaten. If you’re impatient (as I sometimes am), dig in right away and enjoy the extra gooeyness!
