Smoky Instant Pot BBQ Chicken Recipe

Instant Pot BBQ Chicken is incredibly simple: chicken breasts or thighs cooked straight from the refrigerator or freezer with your favorite bottle of BBQ sauce. Make a big batch and use it all week for sandwiches, tacos, casseroles and more.

This Instant Pot BBQ Chicken recipe takes the same easy approach I used for Instant Pot buffalo chicken: two main ingredients and the pressure cooker do the heavy lifting. It’s perfect for meal prep—make a large batch at the start of the week and transform it into different dinners and lunches so you never get bored.

One of the best features of this method is its flexibility. You can use fresh or frozen chicken, bone-in or boneless, breasts or thighs. Frozen chicken goes straight into the pot—no thawing necessary—so it’s ideal for nights when you forgot to defrost. Bone-in pieces add extra depth of flavor and are often more budget-friendly, but boneless chicken shreds easily and works great too.

Instructions

  1. Add the chicken and BBQ sauce to the Instant Pot. Use about 3/4 cup of BBQ sauce per pound of chicken. For example, 2 pounds of chicken needs roughly 1 1/2 cups of sauce. If your sauce is very thick or you worry about scorching, add 1/2 cup chicken broth.
  2. Seal and set to pressure. Close the lid and set the steam release to “sealing.” For bone-in chicken, frozen breasts, or thighs, pressure cook on HIGH for 12 minutes. For fresh boneless breasts, set the timer to 10 minutes.
  3. Natural release then quick release. When the timer finishes, allow the Instant Pot to naturally release pressure for 10 minutes. After that, carefully move the valve to “venting” to release any remaining pressure, then remove the lid.
  4. Shred and toss with sauce. Use two forks to shred the chicken right in the pot or on a cutting board, then mix it with the cooking sauce until well coated. Serve immediately or cool and refrigerate for later use.

Pro tips

  • Season first: Sprinkle the chicken with a simple chicken seasoning or your favorite BBQ rub before adding the sauce for extra flavor.
  • Adjust sauce ratio: For every pound of chicken, use about 3/4 cup BBQ sauce. This keeps the shredded chicken saucy but not soggy.
  • Use a 6-quart Instant Pot: This recipe works from 1 pound up to 6 pounds of chicken in a 6-quart Instant Pot—just scale the sauce accordingly.
  • Yields: One pound of cooked chicken produces roughly 2 cups of shredded chicken. Plan by weight rather than by the number of breasts or thighs, since sizes vary.
  • Storage: Cooked shredded chicken keeps in the refrigerator up to 5 days and freezes up to 6 months in an airtight container.
