Ingredients
- 2 tablespoons olive oil
- 4 tablespoons fresh lime juice (about 2 limes), divided
- 2 tablespoons fresh cilantro, chopped, divided
- 2 cloves garlic, minced
- ½ teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon sea salt (adjust to taste)
- 1 pound boneless, skinless chicken breasts
- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 1 cup cooked white rice (use cilantro-lime rice if you like)
- 4 large flour tortillas (burrito size)
- 1 cup shredded pepper jack cheese
- 1 can (15 oz) black beans, drained and rinsed
Instructions
- In a medium bowl, whisk together the olive oil, 2 tablespoons lime juice, 1 tablespoon chopped cilantro, minced garlic, cumin, chili powder, paprika and sea salt.
- Add the chicken breasts to the marinade, coating them well. Refrigerate and marinate for at least 1 hour, or up to 8 hours for more flavor.
- Prepare the vegetables: slice each bell pepper into large strips and cut the onion into thick rings.
- Preheat a grill to medium heat.
