  • 3 lb boneless roast beef (chuck or round roast)
  • 1/4 cup soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • 2 tbsp honey
  • 1/4 cup sriracha
  • 4 cloves garlic, crushed
  • 2 tbsp fresh cilantro, chopped
  • 1 tsp fresh ginger, grated
  • 24 slider buns (or Hawaiian rolls)

1. Place the roast beef in the crock pot and set to low.

2. In a medium bowl, whisk together the soy sauce, fish sauce, lime juice, honey, sriracha, crushed garlic, chopped cilantro and grated ginger until smooth.

3. Pour the sauce over the beef, making sure it’s well coated.

4. Cover and slow cook on low for 8–10 hours, until the roast is fork-tender.

5. About 30 minutes before serving, prepare the slaw (instructions below).

6. When the beef is done, remove it to a cutting board and shred with two forks. Return shredded beef to the crock pot and stir to coat with the cooking juices.

7. Build sliders by placing a generous portion of shredded Thai beef on each bun and topping with the bell pepper slaw.

  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
