  • 3 cups Mexican rice* (see note below)
  • Chili Lime Garlic Grilled Shrimp
    • 2 garlic cloves, crushed
    • 1 tablespoon brown sugar
    • 3 tablespoons soy sauce (or tamari for gluten-free)
    • 1 teaspoon chili powder
    • 1 tablespoon fresh lime juice (about 1 lime)
    • ½ teaspoon red pepper flakes
    • 2 teaspoons olive oil
    • 15–20 large shrimp, peeled and deveined
  • 1 cup shredded lettuce
  • ½ cup chopped tomatoes
  • ¼ cup Queso Fresco, crumbled
  • Avocado Cream Sauce (about ¼ cup)
    • 1 ripe avocado
    • 1 lime, juiced
    • 1 tablespoon chopped cilantro

*The Mexican rice recipe yields about double what is needed here. You can halve that recipe or save leftovers to serve with grilled chicken or fajita skewers.

1. Prepare the Mexican rice first so it has time to cook while you make the shrimp. The rice requires only about 10 minutes of active prep and simmers for 20–25 minutes.

2. In a medium bowl, whisk together crushed garlic, brown sugar, soy sauce, chili powder, lime juice, red pepper flakes, and olive oil. Add the shrimp, toss to coat, and refrigerate for 10–15 minutes to marinate.

3. When ready, remove the shrimp from the marinade and cook them over medium-high heat. Grill the shrimp or cook in a hot cast-iron skillet for about 3 minutes per side, until opaque and cooked through.

4. When the rice is done, fluff it with a fork and place it in a large serving bowl, or divide it between individual bowls. Top with the cooked shrimp, shredded lettuce, chopped tomatoes, and crumbled Queso Fresco.

5. For the avocado cream sauce, combine avocado, lime juice, and chopped cilantro in a small blender or mash by hand until smooth. Drizzle the sauce over each salad bowl to taste.
