Ingredients
- For the cranberry oatmeal bars (base):
- 3/4 cup all-purpose flour
- 1 cup brown sugar
- 2 cups rolled oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 3/4 cup butter, cold and cubed
- 3 cups cranberries (fresh or frozen)
- For the brown sugar crumble:
- 2 tablespoons flour
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 2 tablespoons butter, cold

Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9″ x 13″ baking dish by spraying with cooking spray or lining with parchment paper for easy removal.
- In a large bowl, combine 3/4 cup flour, 1 cup brown sugar, 2 cups rolled oats, 1/2 teaspoon baking powder and 1/2 teaspoon sea salt.
- Add 3/4 cup cold, cubed butter to the dry mixture and use your hands or a pastry cutter to blend until you have a crumbly texture.
- Press about two-thirds of the crumb mixture evenly into the prepared pan to form the oatmeal base.
- Spread 3 cups of cranberries evenly over the base. If using frozen cranberries, there’s no need to thaw them first.
- In a small bowl, mix 2 tablespoons flour, 1/3 cup brown sugar and 1/2 teaspoon ground cinnamon for the crumble topping. Cut in 2 tablespoons cold butter until a coarse crumble forms.
- Sprinkle the crumble evenly over the cranberries, then finish with the remaining oat crumb if any.
- Bake for 45–50 minutes, or until cranberries begin to burst and the crumble turns golden brown.
- Remove from oven and allow to cool at least 30 minutes before attempting to slice. For clean, uniform bars wait 60 minutes so the filling sets fully.

How to make them gluten free
To make these bars gluten free, replace the all-purpose flour with a 1:1 gluten-free flour blend and be sure to use certified gluten-free rolled oats. The texture and flavor remain just as satisfying when made with these substitutions.
Should I refrigerate uneaten bars?
