I love buffalo sauce, and this Buffalo Cheesy Pizza Bread is one of my favorite ways to use it. Savory, tangy and cheesy, it’s simple to prepare and always a crowd-pleaser. It first appeared in my cookbook years ago and has been a hit at parties ever since.

This recipe starts with pizza dough spread into a rectangle, brushed with a garlic-buffalo butter, topped with shredded mozzarella and parmesan, then rolled and baked until golden and melty. Finish with a brush of remaining sauce and a sprinkle of Italian seasoning for a beautiful, flavorful presentation.

How do you make it?

Making pizza bread is straightforward. Roll your favorite pizza dough into a rectangle on parchment paper. Prepare a garlic-buffalo butter by melting butter, stirring in crushed garlic and buffalo sauce, then spread it evenly over the dough, reserving a small amount for brushing later. Sprinkle shredded mozzarella and grated parmesan, roll the dough up from the long side, place the roll on a baking sheet, brush with the reserved sauce, add an extra sprinkle of parmesan and a dusting of Italian seasoning, then bake at 350°F for 30 minutes until golden and cooked through.

Can you reheat it?

Yes. Leftover pizza bread reheats well and keeps its texture if reheated carefully. For the best results, place slices under a low broiler for 3–4 minutes to crisp the exterior and remelt the cheese. Alternatively, microwave slices for 30–60 seconds for a quick option or use a toaster oven for about a minute. Reheating in a conventional oven at 350°F for 8–10 minutes also restores crispness without drying the interior.

What kind of pizza dough should you use?

Use any pizza dough you prefer. Homemade pizza dough gives the freshest flavor and texture, but store-bought dough works well for convenience. You can buy dough in a ball from the refrigerated section of many grocery stores or use canned pizza dough if you prefer. Choose a dough that stretches easily and isn’t overly wet so you can roll it without tearing.

Tips and variations

  • For extra protein, add shredded cooked chicken tossed in buffalo sauce before rolling the dough.
  • Swap in pepper jack or a blend of Italian cheeses for a different flavor profile.
  • If you prefer less heat, reduce the amount of buffalo sauce or mix it with a touch of melted butter or Greek yogurt to mellow the spice.
  • Serve with ranch or blue cheese dressing for dipping, and garnish with sliced green onions or chopped parsley for color.
  • Make smaller rolls for appetizers or pinwheels; simply slice the rolled log into rounds before baking and adjust baking time as needed.
