This Grilled Caesar Salad is a summer favorite — a simple, smoky twist on a classic. Whether you serve it as a standout side at a backyard barbecue or top it with grilled chicken for an easy weeknight meal, this grilled romaine Caesar is flavorful, crisp, and ready in about 15 minutes.

Bring a smoky flavor to your next salad!
All summer long I’ve been grilling romaine for everything from Caesar and wedge salads to Cobb-style plates. Char-grilling romaine gives the leaves a subtle smoky, caramelized flavor and just enough wilt to carry creamy dressing and crunchy toppings.
Grilling romaine is incredibly quick — the cut side needs only about 4–5 minutes over medium-high heat to develop attractive grill marks and a pleasant, slightly softened texture. Topped with toasted seasoned breadcrumbs, rich Caesar dressing, and freshly grated parmesan, it becomes a memorable salad that’s both simple and satisfying.
Turn it into a main course by adding grilled chicken, shrimp, salmon, or steak. Slice the protein and lay it across the grilled romaine for an easy, crowd-pleasing meal.
This version uses toasted panko breadcrumbs instead of traditional croutons for an even, toasty crunch across every bite — a small change that makes a big difference.

Key ingredients
The ingredient list is straightforward and forgiving. Below are notes to help you choose the best options; the full measurements appear in the recipe section.
- Romaine lettuce – 3 medium-to-small romaine hearts work best. Smaller hearts char more evenly since we grill only the cut side.
- Extra-virgin olive oil + cooking spray – olive oil is used to toast the breadcrumbs; cooking spray or a light brush of oil coats the lettuce before grilling.
- Panko breadcrumbs – toasted and seasoned panko gives the salad a buttery, crunchy finish that distributes more evenly than croutons.
- Italian seasoning – seasons the breadcrumbs; use a store-bought blend or your own dried herb mix.
- Caesar dressing – any favorite Caesar dressing will work; choose one you enjoy for flavor balance.
Instructions
Below are clear, step-by-step instructions to make this grilled Caesar salad at home, with photos to guide you. For recipe quantities and a printable-style ingredient list, see the recipe card further down.

Preheat a charcoal or gas grill to medium-high heat (about 400–450°F), then prepare the toasted breadcrumbs.
- Warm 1 tablespoon olive oil in a skillet over medium heat. Add the panko and toss until evenly coated.
- Toast the breadcrumbs, stirring occasionally, until golden and fragrant, about 8 minutes. Watch carefully to avoid burning.
- Stir in the Italian seasoning, toast one more minute, then remove from heat and set aside.

Grill the romaine.
- Trim about 1/4″ from the stem end of each romaine heart and slice each heart in half lengthwise. Remove any loose outer leaves.
- Spray or brush the cut side with oil, season with salt and pepper, then place cut-side down on the hot grill.
- Grill undisturbed for 4–5 minutes, until you see clear char marks and the lettuce softens slightly.
Transfer the grilled romaine to a serving platter with the grilled side up. Drizzle evenly with Caesar dressing, sprinkle with grated parmesan and cracked black pepper, then scatter the toasted breadcrumbs on top. Serve immediately.

Add grilled chicken
To make this a hearty main, add simple grilled chicken.
- Prepare the grill, toast the breadcrumbs, and ready the romaine as described above.
- Slice one large chicken breast lengthwise into two thinner cutlets. Rub with olive oil and season with Cajun or Italian seasoning.
- Grill the chicken over direct heat for 4–5 minutes per side, or until the internal temperature reaches 165°F. Allow to rest before slicing.
- Thinly slice the chicken and arrange on top of the prepared salad just before serving.

Other delicious additions
- Grilled baguette – toast 1/2″ slices, oil side down on the grill for 1–2 minutes for an easy side.
- Marinated salmon – a flavorful alternative to chicken; grill alongside the romaine.
- Grilled shrimp – 1 pound large shrimp tossed in oil and seasoning, grilled 2–3 minutes per side.
- Parmesan-crusted chicken – for a crisp, savory topping.
- Steak – sliced steak or steak bites make a rich, satisfying protein addition.
- Roasted chickpeas – a great vegetarian protein option for added crunch.
- Avocado – thin slices added just before serving give a creamy finish.
What to serve it with
This grilled Caesar salad works as either a main or a side. Paired with any grilled entrée, it complements bold, smoky flavors especially well. Try it alongside grilled steak, pork tenderloin, burgers, marinated chicken thighs, or grilled shrimp for a complete meal.
