  • 2 ripe bananas, mashed
  • 2 large eggs, whisked
  • ½ cup protein powder
  • 2 tbsp ground flax seeds
  • 5 dates, pitted and chopped

Instructions

  1. In a medium bowl, combine the mashed bananas, whisked eggs, protein powder and ground flax seeds until well blended. The batter will be thicker than traditional pancake batter—this helps the pancakes hold together without flour.
  2. Fold in the chopped dates so they are evenly distributed through the batter.
  3. Heat a large skillet or nonstick pan over medium heat and lightly coat it with cooking spray or a small amount of oil.
  4. When the pan is hot, spoon the batter into the skillet to form pancakes of your desired size. Flatten gently with the back of the spoon if needed.
  5. Cook the pancakes 3–5 minutes on the first side, until bubbles form at the edges and the bottom is golden. Flip carefully and cook another 3–5 minutes until cooked through. Because the batter is dense, give them time to set before flipping.
