- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- ½ cup parmesan cheese, grated
- 1 cup cherry tomatoes, diced
- 1 cup fresh spinach, chopped
- ½ cup roasted red peppers, chopped
- ¼ cup peperoncinis, sliced
- ¼ cup fresh basil, chopped
- 1 tbsp dried oregano
- 1 tbsp dried parsley
- 4 cloves garlic, crushed
- 2 (8 oz) cans crescent roll dough (16 oz total)

Cheesy Veggie Pizza Rolls Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, combine the ricotta, shredded mozzarella and grated parmesan until evenly mixed.
- In a large bowl, mix the diced cherry tomatoes, chopped spinach, roasted red peppers, sliced peperoncinis, chopped basil, dried oregano, dried parsley and crushed garlic.
- Roll out each can of crescent roll dough and press the perforations together to form two larger rectangles.
- Spread the cheese mixture evenly over the surface of each roll of dough.
- Distribute the vegetable mixture evenly across the cheese-covered dough.
- Starting at one long edge, roll the dough tightly over the filling to form two logs.
- Slice each log into 1-inch sections and arrange the slices touching in an oven-safe dish so the rolls support one another while baking.
- Bake for 25–30 minutes, or until the rolls are puffed and golden brown. Let cool briefly before serving.
