How to make crispy baked avocado

  1. Make the seasoned cereal crumbs. Pulse 1 cup Rice Chex (or corn flakes if you prefer) with 2 tablespoons taco seasoning in a food processor or blender until you have a fine crumb. Ingredients

  • 2 large avocados
  • 1/4 cup hot sauce
  • 8 corn tortillas
  • 1 cup refried black beans
  • 1 cup roasted poblano corn salsa (or your preferred fresh corn salsa)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the cereal and taco seasoning in a food processor and blend to fine crumbs. Transfer to a shallow bowl.
  3. Pour the hot sauce into another shallow bowl.
  4. Slice each avocado: remove the pit, cut each avocado into four quarters and then slice each quarter into three even slices. Remove the flesh from the skin carefully so the slices stay intact.
  5. Dip each avocado slice into the hot sauce, then dredge in the seasoned cereal crumbs until well coated.
  6. Place the breaded slices on an oiled wire rack set over a baking sheet. Bake 15–20 minutes until golden and crispy.
  7. Warm the tortillas in the oven wrapped in foil for 5 minutes, or microwave wrapped in a damp paper towel for 30 seconds.
  8. Heat the refried black beans, then spread a spoonful down the center of each tortilla. Top with 3 crispy avocado strips and a generous spoonful of corn salsa.

  • For even avocado strips: quarter the avocado, remove the pit, then slice each quarter into three equal pieces before removing the skin.
