Fajitas are a family favorite and a reliable weeknight solution. The combination of seasoned skirt steak, colorful bell peppers, and sweet red onion is classic for a reason—simple ingredients transform into a satisfying meal when cooked with the right timing and technique. Using an electric pressure cooker (Instant Pot) speeds the process while keeping the steak exceptionally tender.

What makes this method work well is sautéing the vegetables first, removing them briefly, then quickly searing and pressure-cooking the steak. That way you get crisp vegetables and perfectly cooked beef without needing multiple pans or long braising times. The whole recipe takes about 29 minutes, including the time it takes the Instant Pot to reach pressure and release.

How to make Instant Pot Fajitas

  1. Season the steak. Thinly slice skirt steak across the grain into strips and toss with your preferred fajita seasoning. Set aside to let the flavors meld briefly.
  2. Sauté the vegetables. Activate the Instant Pot’s sauté function on the normal heat setting. Add olive oil, then sauté sliced bell peppers and red onion for about 5 minutes until they begin to soften and caramelize. Remove the vegetables and set aside to keep them crisp.
  3. Sear the steak. With the sauté function still on, add the seasoned steak slices and sear quickly—about 1 minute—just to brown the outside and lock in juices. Then cancel the sauté function.
  4. Pressure cook the steak. Pour fresh lime juice and beef broth into the pot (water or chicken broth can substitute). Lock the lid and set the steam release to sealing. Select high pressure and set the timer for 5 minutes. Allow the cooker to build pressure, cook the steak for the set time, then let it naturally release pressure for 5 minutes before performing a quick release to vent any remaining steam. Use caution when releasing pressure to avoid burns.
  5. Combine and serve. Remove the lid, return the sautéed peppers and onions to the pot, and toss gently with the steak so the flavors mingle. Use a slotted spoon or tongs to transfer the fajita mixture to tortillas, rice, or cauliflower rice. Serve immediately with your favorite toppings.

What cut of beef is best for fajitas?

Skirt steak is my top choice for fajitas thanks to its flavor and texture when sliced thinly against the grain. Flank steak is a good alternative if skirt is unavailable—slice it thin and against the grain the same way.

What to serve with the fajitas

Classic toppings such as guacamole, sour cream, and pico de gallo complement the steak and vegetables. For sides, consider Mexican-style rice, roasted corn or a fresh salad. Below are a few versatile serving ideas:

  • Flour or corn tortillas — choose corn tortillas for a gluten-free option.
  • Cilantro-lime cauliflower rice — an excellent low-carb or keto-friendly base topped with sliced avocado.
  • White or Mexican-style rice — a heartier traditional pairing.
  • Pico de gallo or salsa — adds bright, fresh acidity and texture.
