Its smoky, chili-forward heat and rich, fatty texture make it an outstanding flavor booster for simple weeknight meals. This pasta comes together in about 20 minutes: a silky, creamy sauce brightened with lemon and finished with parmesan and parsley. It’s quick, bold, and perfect with a wide, long noodle like pappardelle, tagliatelle, or fettuccine.

I first discovered nduja at a favorite restaurant where it arrived spread on grilled bread as part of a charcuterie board — concentrated, spicy, and irresistible. Nduja’s soft, spreadable texture comes from its higher fat content combined with Calabrian chili peppers and salt. It’s now one of my go-to pantry ingredients for adding instant depth and heat to sauces, soups, and simple pastas.

Ingredients
- Pasta – long, wide noodles work best. Pappardelle is ideal; tagliatelle or fettuccine are good substitutes.
- Unsalted butter – using unsalted butter lets you control the final seasoning.
- Nduja – a spreadable Calabrian salami made with pork, chili peppers, and salt. It delivers smoky heat and richness.
- Garlic – fresh cloves, crushed or finely minced for the best flavor.
- Heavy cream – creates a luxurious, stable sauce; avoid swapping with milk or half-and-half if you want the same richness.
- Fresh lemon juice – brightens the sauce and balances the spice and fat.
- Sugar – a small amount helps tame saltiness and round the flavors.
- Parmesan cheese – freshly grated, added gradually so it melts smoothly into the sauce.
- Salt and black pepper – to taste.
- Fresh parsley – stirred in at the end and used as garnish.
Instructions
Below are the clear steps to build the sauce and finish the pasta. The whole meal takes about 20 minutes from start to finish.




- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water.
- In a large skillet over medium heat, melt the unsalted butter. Add the nduja and the crushed garlic, breaking the nduja apart and whisking until it has melted into the butter and become fragrant.
- Pour in the heavy cream and stir to combine. Keep the sauce at a gentle simmer — it should heat through but not reach a rolling boil.
- Add the lemon juice and the granulated sugar; stir to balance the flavors.
- Gradually add the grated parmesan, about 1/4 cup at a time, stirring after each addition so the cheese melts evenly and the sauce becomes silky.
- Season with salt and freshly ground black pepper to taste. Remember that nduja and parmesan contribute saltiness, so taste as you go.
- Add the drained pasta to the skillet and toss to coat. If needed, add 1–2 tablespoons of reserved pasta water to achieve the desired consistency and to help the sauce cling to the noodles. Add water sparingly and adjust until the sauce is glossy and well-coated.
- Remove from heat, stir in most of the chopped parsley, then portion into bowls and garnish with the remaining parsley and extra parmesan if desired.

Optional additions
This dish is delicious on its own, but here are tested extras you can add to vary the texture and flavor.
- Roasted cherry tomatoes: Toss 2 cups cherry tomatoes with 2 tablespoons olive oil, salt, and pepper. Roast at 400°F for 15–20 minutes. Spoon about 1/2 cup roasted tomatoes over each serving for brightness and acidity.
- Toasted breadcrumbs: Heat 2 tablespoons olive oil over medium heat, add 1/2 cup panko breadcrumbs and toast 8–10 minutes until golden. Stir in a pinch of dried Italian seasoning for an optional crunchy topping.
- Ricotta dollop: Whisk 1/2 cup ricotta with 1 teaspoon dried oregano and 1/2 teaspoon salt. Spoon a dollop on top before serving for creaminess and balance.
- Grilled shrimp: Season peeled, deveined shrimp with olive oil, salt, and pepper and grill 2–3 minutes per side. Serve on top of the pasta for a surf-and-turf approach.
- Sautéed mushrooms: Earthy mushrooms pair beautifully with nduja — sauté sliced mushrooms until golden and toss them into the finished pasta.

Storage and reheating
Store leftovers in an airtight container in the refrigerator for up to 5 days. To reheat on the stove, warm the pasta in a skillet over medium heat for about 5 minutes, stirring occasionally. If it seems dry, add 2–3 teaspoons of water or chicken broth to loosen the sauce.
To reheat in the microwave, add 2–3 teaspoons of water or broth, cover, and heat in 1-minute intervals, stirring between bursts, until warmed through. The extra liquid helps prevent the sauce from drying out.

What to serve with it
Nduja pasta pairs well with crisp salads, roasted vegetables, or crusty bread to mop up the sauce. Good side ideas include an Italian green salad, panzanella, roasted broccolini, roasted zucchini, tomato-basil bruschetta, garlic knots, or garlic bread.
