My husband grew up on the East Coast where a great meatball sub was easy to find. After trying many versions here in San Diego without finding one that matched his memories, I set out to make the most epic meatball sub at home. The result pairs juicy Italian-style meatballs with crisp, toasted baguette and two types of cheese for a perfectly balanced sandwich that resists sogginess and delivers big flavor.

The secret to a great meatball sub is simple: juicy, well-seasoned meatballs, a flavorful marinara, and a sturdy roll that toasts up crisp. For this recipe I use demi baguettes (half-size baguettes) that toast beautifully. If you prefer, use one whole baguette and cut it into portions. Using marinara instead of plain tomato sauce brings additional depth and herbs, and finishing the sandwich with both mozzarella and grated parmesan gives you melty richness plus savory brightness.

Ingredients

  • Meatballs – fully cooked meatballs work best. Use homemade Italian meatballs or prepared meatballs that are already cooked.
  • Baguette – two demi baguettes, or one whole baguette cut into four portions. A baguette crisps nicely and stands up to saucy meatballs.
  • Marinara sauce – use a flavorful marinara or a high-quality jarred marinara for best results.
  • Mozzarella cheese – about 8 slices of mozzarella; some melt inside the bread and more on top of the meatballs.
  • Parmesan cheese – grated, for finishing.
  • Fresh basil leaves (optional) – add a few leaves for freshness and color just before serving.

Instructions

Below are simple, clear steps to assemble and bake these delicious meatball subs. For best results, have your meatballs fully cooked before you begin the assembly.

  1. Preheat the oven. Set the oven to 450°F (230°C).
  2. Simmer the meatballs in sauce. Place cooked meatballs in a large saucepan, pour enough marinara to cover and warm through, then simmer gently for about 10 minutes so the flavors meld.
  3. Prepare the baguettes and melt the base layer of cheese. Slice the demi baguettes in half lengthwise. Arrange two slices of mozzarella (cut lengthwise and slightly overlapping) on the bottom halves of each baguette. Replace the top halves and bake the closed baguettes in the oven for about 5 minutes to crisp the bread and begin melting the cheese.
  4. Add saucy meatballs. Remove the baguettes from the oven, lift off the top halves, and spoon 6 warmed meatballs with sauce onto each bottom half (or divide evenly across a whole baguette cut into portions).
  5. Top with more cheese and finish baking. Add another two mozzarella slices over the meatballs, then return the open-faced sandwiches to the oven for 3–5 minutes or until the cheese is fully melted and bubbly.
  6. Finish and serve. Take the sandwiches out of the oven, partially place the top bread piece back on, and sprinkle the meatballs with grated parmesan. Add fresh basil leaves if using. Cut each baguette portion in half and serve hot.

Recipe notes

  • Best served hot. These meatball subs are at their peak right out of the oven. The baguette stays crisp and the cheese is perfectly melted.
  • Make ahead options. You can keep leftover saucy meatballs refrigerated for up to 5 days and assemble fresh sandwiches later. Rewarm the meatballs in marinara on the stove before building the sandwich.
  • Slow cooker option. If you prefer to cook meatballs low and slow, you can simmer meatballs in marinara in a slow cooker and then use them to make these subs when ready.
  • Flavor variations. Spread basil pesto on the bottom half of the bread before adding the first layer of cheese for a fragrant twist. Roasted red peppers also make a tasty addition layered under the meatballs.

Sides to serve with it

These meatball subs pair well with crisp salads for a satisfying meal. Try a simple Italian salad, a Caesar salad, or a light spinach and strawberry salad for contrast.
