  • 1 cup quinoa, uncooked
  • 1 avocado, diced
  • 1 cup edamame beans (shelled)
  • ½ cup pistachios, crushed

Grilled Veggie Vegan Buddha Bowl Instructions

  1. Preheat a grill or a grill pan to medium-high heat.
  2. Toss the asparagus, bell pepper, and zucchini with the olive oil and steak seasoning until evenly coated.
  3. Place the vegetables in a veggie grill basket or directly on the grill pan. Grill for 5–6 minutes, turning after 2–3 minutes, until vegetables are tender and slightly charred.
  4. While the vegetables grill, cook the quinoa according to package instructions (usually 1 cup quinoa to 2 cups water, simmered until water is absorbed). Fluff with a fork and keep warm.
