Ingredients you’ll need

  • Quinoa – 1 cup (white, red or tri-color all work)
  • Olive oil – 2 tablespoons for cooking + 1/2 cup for dressing
  • Red onion – 1/4 cup, minced
  • Red bell pepper – 1/4 cup, minced
  • Garlic – 3 cloves, minced
  • Fresh basil – 2 tablespoons, chopped
  • Fresh Italian parsley – 2 tablespoons, chopped
  • Balsamic vinegar – 1/4 cup
  • Lemon juice – 1 teaspoon, fresh preferred
  • Salt – 1/2 teaspoon
  • Black pepper – 1/2 teaspoon
  • Cherry or grape tomatoes – 1 pint, halved
  • Fresh mozzarella – 1 cup, cubed

Step-by-step instructions

  1. Cook the quinoa. Rinse the quinoa if desired, then combine 1 cup quinoa with 2 cups water in a medium saucepan. Bring to a boil, reduce heat, cover and simmer for about 15 minutes until the water is absorbed. Fluff with a fork and set aside to cool slightly.
  2. Sauté the vegetables. Heat 2 tablespoons olive oil in a skillet over medium heat. Add the minced red onion and red bell pepper and cook 2–3 minutes until softened. Add the garlic and cook another minute. Remove from heat and let cool.
  3. Prepare the dressing. In a bowl, whisk together 1/2 cup olive oil, 1/4 cup balsamic vinegar, 1 teaspoon lemon juice, chopped basil, chopped parsley, 1/2 teaspoon salt and 1/2 teaspoon black pepper until well combined.
  4. Combine sautéed vegetables with dressing. Add the cooked onion, bell pepper and garlic to the dressing and stir to coat.
  5. Toss in the tomatoes. Add the halved cherry tomatoes to the dressing mixture and refrigerate for 5–10 minutes to let the flavors meld and the tomatoes marinate slightly.
  6. Finish the salad. In a large bowl, combine the cooked quinoa and cubed fresh mozzarella. Add the tomato and dressing mixture, toss gently to combine, and adjust seasoning if needed.
