Back in 2016 I developed this idea while thinking about my favorite Thai peanut sauce and how to use it in new recipes. These Thai turkey meatballs quickly became a household favorite and have stayed in regular rotation ever since.
The original method used a slow cooker to gently cook the meatballs in the peanut sauce. For a faster option, you can bake or broil the meatballs and toss them in the sauce for a quick, satisfying meal in under 30 minutes. Both methods yield delicious results; choose slow cooking for a hands-off approach or the oven for speed.

Ingredients
- For the turkey meatballs:
- Olive oil – or your preferred vegetable oil.
- Onion – yellow onion is recommended for a neutral flavor, diced.
- Garlic – fresh minced cloves for best flavor.
- Ground turkey – choose lean turkey with about 7% fat for tender meatballs; very extra-lean turkey can dry out.
- Fresh ginger – grated. (Tip: frozen ginger is easy to grate without peeling.)
- Fresh cilantro – chopped.
- Thai red curry paste – adds a touch of heat and depth of flavor.
- Panko breadcrumbs – for texture; substitute gluten-free panko if needed.
- Egg and egg yolk – one whole egg plus one yolk helps bind without adding excess moisture.
- For the Thai peanut sauce:
- Coconut milk – full-fat for a richer, creamier sauce.
- Peanut butter – creamy style; note that varieties with added sugar will make the sauce sweeter.
- Thai red curry paste – balances heat and savory flavor in the sauce.
- Apple cider vinegar – adds tang.
- Soy sauce – low-sodium recommended; use tamari for a gluten-free option.
- Brown sugar – balances savory and spicy notes.
- Fresh lime juice – adds bright acidity; fresh-squeezed is best.
Instructions
Below are clear, step-by-step instructions to prepare the meatballs and the sauce. Quantities and full details are listed in the recipe card further down.


- Make the aromatics: Heat the olive oil in a skillet over medium-high heat. Cook the diced onion for 4–5 minutes, then add minced garlic and grated ginger and cook for an additional minute. Remove from the heat and let cool slightly.
- Mix the meatball base: In a large bowl combine ground turkey, chopped cilantro, red curry paste, panko breadcrumbs, the whole egg and the egg yolk, and the cooked onion, garlic and ginger. Gently mix until just combined — avoid over-mixing to keep the meatballs tender.
- Form meatballs: Shape the mixture into about 25–30 golf ball-sized meatballs. For consistent sizing use a cookie scoop lightly sprayed with cooking spray.


- Sear then slow cook (if using slow cooker): Return the same skillet to medium-high heat and brown the meatballs on all sides, 2–3 minutes per side. Transfer browned meatballs to the slow cooker.
- Prepare and add the peanut sauce: In a blender or food processor, combine coconut milk, peanut butter, red curry paste, apple cider vinegar, soy sauce, brown sugar and lime juice. Blend until smooth and pour over the meatballs in the slow cooker. Cook on high for 2–3 hours or low for 5–6 hours.

How to make them in the oven
If you’d rather finish the meatballs quickly in the oven, follow these steps. Broiling gives a nice exterior color and keeps the inside moist when timed correctly.
- Preheat your oven broiler to high and position a rack in the middle.
- Arrange meatballs in a single layer on a foil-lined baking sheet and broil for 6 minutes.
- Carefully flip the meatballs and broil another 4–6 minutes, or until internal temperature reaches 165°F.
- Remove and immediately toss with the Thai peanut sauce to coat.
You can also bake at 400°F for 18–20 minutes or air fry at 400°F for 8–10 minutes depending on your preference.

Ways to serve the meatballs
These Thai turkey meatballs are versatile — here are popular serving ideas:
- Bowl: Serve over steamed white or brown rice or quinoa with shredded carrots, cilantro and chopped peanuts. Add sautéed bell peppers, roasted zucchini or steamed broccoli for extra vegetables.
- Wraps: Warm pita, naan, or flatbread makes a great vessel — add lettuce, carrots, cilantro and a squeeze of lime.
- Appetizer: Keep meatballs warm in the slow cooker with sauce for easy party serving.
- Noodles: Toss cooked rice noodles in extra peanut sauce and top with meatballs for a Thai-style noodle dish.
- Spaghetti squash: Roast spaghetti squash and serve the meatballs over the strands for a lower-carb option.
- In soup: Fully cook the meatballs and add them to a coconut-based Thai soup for a heartier broth.
No matter how you serve them, the creamy peanut sauce elevates the simple turkey meatballs into a memorable meal.
Storing and freezing the meatballs
Uncooked meatballs will keep in an airtight container in the refrigerator up to 3 days. Cooked meatballs stay fresh refrigerated for up to 6 days.
To freeze raw meatballs, arrange them in a single layer on a parchment- or foil-lined baking sheet about 1/2″ apart and freeze for 30 minutes until firm, then transfer to a freezer-safe bag to prevent sticking. Cooked meatballs should be cooled completely before freezing in freezer-safe containers or bags. Label with the date; frozen meatballs keep up to 6 months.
Uncooked frozen meatballs can be baked directly from frozen at 400°F for 20–25 minutes, or thaw in the refrigerator 12–24 hours before cooking.

- Even sizes: Use a cookie scoop for consistent meatball size so they cook evenly.
- Do not overcook: Overcooking dries turkey meat — aim for an internal temperature of 165°F.
- Pan-fry option: Fry meatballs in batches in a skillet with a tablespoon of oil, rotating until browned, about 5–7 minutes total per batch.
- Gluten-free: Swap panko for gluten-free breadcrumbs and use tamari or gluten-free soy sauce in the peanut sauce.

Instructions (Condensed)
- Sauté onion in olive oil until soft, add garlic and ginger, cook 1 minute, then remove from heat.
- Combine turkey, cilantro, curry paste, panko, egg and yolk, and cooked aromatics. Mix gently and form into ~30 meatballs.
- For slow cooker: brown meatballs in a skillet, transfer to slow cooker, pour blended peanut sauce over, and cook 2–3 hours on high or 5–6 hours on low.
- For oven: broil meatballs on a foil-lined sheet 6 minutes, flip and broil 4–6 more minutes (or bake at 400°F for 18–20 minutes). Toss with peanut sauce and serve.
