Fresh blueberries and almond extract brighten my Grandma Meme’s simple pound cake for a truly delicious treat.

One of my favorite childhood desserts was my Grandma Meme’s pound cake. I can still picture it now, sitting on her kitchen table in a covered glass cake stand, the golden crust promising a soft, buttery slice inside. Growing up across the street from a Southern grandma meant desserts were never only for special occasions — milkshakes, cookies, pies and cakes found their way into everyday meals, and every bite felt like home.

That photo of us baking together is one of my favorites: it captures the freedom Grandma Meme gave us to sit on the counter, help stir the batter, and sneak cookie dough. I miss her every day. When I’m in the kitchen, I still hear her voice — and I like to think she’d approve of a little extra butter now and then.

Recently I decided to revisit her classic pound cake and give it a fresh twist. I asked my dad for Grandma Meme’s handwritten recipe card — simple, old-fashioned, and full of memory. I swapped the original lemon flavoring for almond extract and folded in fresh blueberries. The result is the same comforting pound cake I remember, now studded with juicy berries and kissed with almond aroma.

Blueberry Almond Pound Cake Ingredients
- 1 cup butter
- 2 cups sugar
- 3 cups cake flour
- 1 cup buttermilk
- ¼ tsp baking soda
- ½ tsp almond extract
- 1 tsp vanilla extract
- 4 eggs
- 1 cup fresh blueberries
Blueberry Almond Pound Cake Instructions
- Preheat the oven to 325°F (163°C).
- Cream the butter and sugar together until light and fluffy.
- Add the cake flour and buttermilk alternately—start and end with flour—mixing just until combined.
- Add the baking soda, almond extract, vanilla extract and eggs. Mix until incorporated, taking care not to overwork the batter.
- Lightly hand fold in the fresh blueberries so they’re evenly distributed without crushing them.
- Pour the batter into a well-greased bundt pan and smooth the top.
- Bake for 1 hour to 1 hour 15 minutes. Resist opening the oven door while it bakes—Grandma Meme always warned us not to open it so the cake would rise and set properly.
- Remove the cake from the oven and let it cool 10–15 minutes in the pan before turning it out to cool completely on a wire rack.

Baking Tips and Serving Ideas
To get the best texture and appearance from this recipe, follow a few simple tips:
- Bring butter, eggs and buttermilk to room temperature before starting. This helps the batter blend smoothly and gives a finer crumb.
- Grease the bundt pan thoroughly, paying attention to the center tube and any crevices. A light coating of butter followed by a dusting of flour helps the cake release cleanly.
- For extra protection against berries sinking, gently toss the blueberries in a tablespoon of flour before folding them into the batter. This is optional but can help them stay suspended throughout the cake.
- Allow the cake to cool slightly before attempting to remove it from the pan. Cooling for 10–15 minutes helps prevent the cake from breaking apart.
This cake makes a lovely centerpiece for a holiday table or a simple afternoon treat. If you want to celebrate with patriotic colors, stir in raspberries or chopped strawberries along with or instead of some of the blueberries to create a red, white and blue presentation. Serve slices plain, with a dusting of powdered sugar, or a dollop of whipped cream.

Storage
Store the cooled cake in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, wrap slices tightly and freeze for up to 2 months; thaw in the refrigerator or at room temperature before serving.
