  1. Preheat the oven to 400°F (200°C).
  2. Place the scrubbed sweet potatoes on a baking sheet and brush them with the olive oil so the skins roast nicely.
  3. Roast the sweet potatoes for 35–40 minutes, depending on size, until they are soft to the touch but not mushy. Remove from the oven when done.
  4. While the potatoes roast, combine the cranberries, diced pancetta, and maple syrup in a large bowl and toss to coat.
  5. Arrange the cranberry and pancetta mixture in a single layer on a separate baking sheet lined with parchment for easy cleanup.
  6. When the sweet potatoes have about 20 minutes left, place the cranberries and pancetta in the oven and roast until the cranberries begin to pop and the pancetta is crisp and caramelized with the maple syrup, about 15–20 minutes.
  7. Remove everything from the oven. Let the cranberries and pancetta cool slightly and set them aside.
  8. Allow the sweet potatoes to cool for 10–15 minutes so they’re easier to handle. Slice each potato in half lengthwise.
  9. Scoop out some of the flesh from each half to create a shell for the filling. (Save the scooped sweet potato for mashed sweet potatoes, muffins, or another use.)
  10. Fill each sweet potato skin with the roasted cranberry and pancetta mixture and serve warm.
