Pulled Pork Tamale Casserole Recipe

Tamales are one of those dishes everyone loves, but they can be very time consuming when made individually. This Pulled Pork Tamale Casserole captures all the familiar tamale flavors—sweet corn masa, smoky chipotle-honey pork, roasted poblano peppers and sharp spicy cheddar—without the long process of wrapping and steaming each tamale. The result is a comforting, family-style casserole that’s gluten-free, easy to assemble and perfect for weeknights or casual dinners with friends.

Why this recipe works

This casserole simplifies the classic tamale by turning the corn masa into a creamy layer that bakes up tender and slightly sweet. Using slow-cooked chipotle honey pulled pork gives you bold smoky and sweet flavors without extra effort: put the pork in the slow cooker in the morning, and with fewer than 30 minutes of prep in the evening you can assemble and bake the casserole. Roasted poblanos add a gentle heat and roasted depth, while spicy cheddar provides a melty, savory finish.

Pulled Pork Tamale Casserole Ingredients

  • 3 large poblano peppers
  • 2 cups harina de maiz (masa harina) or fine cornmeal
  • ½ cup lukewarm water
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 egg
  • 4 ears of corn, kernels removed
  • 4 cups chipotle honey pulled pork (see notes if making your own in a slow cooker)
  • 2 cups spicy cheddar cheese, shredded
  • ½ cup avocado cream sauce (optional, for topping)

Note: Cutting a pulled pork recipe in half will usually yield about 4 cups, which is the amount used here.

Instructions

  1. Preheat your oven broiler to high. Place the whole poblano peppers directly under the broiler. Roast until the skin is blackened and blistered on all sides, about 8–12 minutes per side depending on your broiler. Remove the peppers and place them in a sealed plastic bag or covered bowl to steam; set aside.
  2. Preheat the oven to 400°F (200°C).
  3. In a food processor, combine the masa harina (or cornmeal), lukewarm water, sugar, baking powder, salt, egg and softened butter. Process until mostly smooth. Add the corn kernels and blend just until the mixture becomes creamy but still has a little texture from the corn.
  4. Spoon half of the masa mixture into the bottom of a 9″ x 13″ (or 9″ x 12″) casserole dish and spread into an even layer.
  5. Top the masa with the pulled pork and sprinkle with 1½ cups of shredded spicy cheddar.
  6. Peel the blistered skin from the poblano peppers, slice each pepper in half and remove stems and seeds. Arrange the roasted poblano halves over the cheese layer.
  7. Spread the remaining masa mixture over the peppers and top with the remaining ½ cup of cheese.
  8. Bake the assembled casserole for 30 minutes, until the top is set and the cheese is melted and slightly golden.
  9. If using, prepare a simple avocado cream sauce while the casserole bakes and drizzle on slices when serving. Let the casserole rest a few minutes before slicing so it holds together.

Serving suggestions and tips

Cut the casserole into squares and serve warm with a dollop of avocado cream, a squeeze of lime, fresh cilantro and sliced radishes or pickled onions for brightness. This casserole pairs well with a simple green salad or a side of black beans and rice.

For the pulled pork: using a slow cooker makes this especially convenient. Season your pork with chipotle and honey flavors and cook low for several hours until it shreds easily. If you have leftover pulled pork or rotisserie chicken, those work well too.

Variations

  • Vegetarian option: Substitute 4 cups of hearty vegetables and beans—black beans, sautéed mushrooms, zucchini, bell pepper, and tomatoes are a great mix—for the pulled pork.
  • Chicken or beef: Use shredded chicken (for a lighter option) or slow-cooked shredded beef for a different flavor profile.
  • Cheese: Swap the spicy cheddar for Monterey Jack, pepper jack, or a blend for milder or creamier results.

Make-ahead and storage

You can make the pulled pork a day ahead and refrigerate. Assemble the casserole and cover it tightly, then refrigerate until ready to bake; you may need to add a few extra minutes to the baking time if baking from cold. Leftovers store in the refrigerator for 3–4 days and reheat well in a 350°F oven or in portions in the microwave.

This recipe is naturally gluten-free when you use masa harina and check that any prepared pulled pork sauce is gluten-free. The balance of sweet chipotle honey pork, corn masa and roasted poblano peppers delivers a sweet, smoky and slightly spicy bite in every forkful.
