In one pot, cook up a delicious vegan dinner with the superfood freekeh, beans, tomatoes, corn and Mexican spices.

One-pot dinners are a lifesaver on busy weeknights: minimal cleanup, big flavor, and an easy way to get a nutritious meal on the table. This One Pot Vegan Mexican Freekeh combines a hearty ancient grain with beans, tomatoes, corn and bright Mexican-inspired spices to deliver a filling, plant-based entrée that cooks all in a single pot. Freekeh is a roasted green wheat prized for its chewy texture, nutty flavor, high protein content and generous fiber—making it a satisfying base for savory bowls and grain salads. It also cooks quickly compared with many other whole grains, so it’s ideal for fast, wholesome dinners.

This recipe is straightforward: sauté aromatics, add freekeh, vegetables, canned tomatoes and beans, then simmer gently in vegetable broth until the freekeh absorbs the liquid and becomes tender. Finish with fresh cilantro and diced avocado for creaminess. The result is a colorful, flavorful bowl with protein, fiber and plenty of texture. It’s naturally vegan, easy to customize, and makes great leftovers for lunches or quick dinners all week long.

Ingredients
- 2 tbsp olive oil
- ½ cup onion, diced
- ½ cup red bell pepper, diced
- 4 garlic cloves, minced
- 1 jalapeño, diced (seeded for milder heat)
- 1 cup freekeh
- 1 cup corn kernels (fresh, frozen or canned)
- 1 (14.5 oz) can diced tomatoes with green chilies
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 tsp kosher salt (adjust to taste)
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp dried oregano
- 3 cups vegetable broth
- ¼ cup finely chopped cilantro
- 1 avocado, diced, for garnish
Instructions
- Heat the olive oil in a large, heavy-bottomed pot over medium heat.
- When the oil is hot, add the diced onion, red bell pepper, minced garlic and jalapeño. Sauté, stirring occasionally, until the vegetables begin to soften, about 3–4 minutes.
- Add the freekeh, corn, diced tomatoes with green chilies, kidney beans, kosher salt, cumin, chili powder and dried oregano. Stir to combine so the freekeh and spices are evenly distributed.
- Pour the vegetable broth over the mixture and give everything one more stir to ensure the freekeh is submerged.
- Bring the pot to a gentle boil, then reduce the heat to low. Cover and simmer for about 45 minutes, or until the freekeh has absorbed the broth and reached your preferred tenderness. If the mixture looks dry before the freekeh is cooked through, add a splash more broth or water and continue cooking a few minutes longer.
- Remove the pot from the heat. Taste and adjust seasoning if needed. Stir in half of the chopped cilantro, reserving the rest for garnish.
- Serve the freekeh bowls warm, topped with diced avocado and the remaining cilantro. A squeeze of fresh lime or a dollop of salsa or vegan sour cream adds bright contrast if desired.
Tips, Variations & Serving Suggestions
- Make it milder by removing the jalapeño seeds, or add extra heat with a pinch of cayenne or chopped chipotle in adobo for a smoky kick.
- Swap the kidney beans for black beans or pinto beans depending on preference or what you have on hand.
- For extra veggies, stir in chopped zucchini, spinach or kale during the last 10 minutes of cooking so they wilt but retain texture.
- Serve with lime wedges, crunchy tortilla chips, pickled onions, or a simple green salad for a complete meal.
- This dish reheats well—store leftovers in an airtight container in the refrigerator for a few days and reheat gently on the stovetop with a splash of broth to revive the texture.
