Crispy baked tortillas filled with creamy Buffalo chicken make these individual Buffalo Chicken Dip Taco Cups an ideal appetizer for Taco Tuesday, parties, or game day.

Hello from Chicago Midway — I’m at the airport waiting for my flight home to San Diego and wanted to quickly share my latest recipe obsession: taco cups! These little handheld delights combine the beloved flavors of Buffalo chicken dip with a crisp tortilla shell to create perfectly portioned bites.
I first played around with the taco cup idea in a ceviche-inspired version before Cinco de Mayo, and later developed a dessert fruit taco cup for summer entertaining. Now I’m adapting the concept for football season with Buffalo Chicken Dip Taco Cups. They’re simple to assemble, easy to serve, and always popular at gatherings.

What makes these taco cups irresistible is the combination of warm, shredded chicken tossed in tangy buffalo sauce layered over a creamy base of softened cream cheese and bleu cheese (or ranch, if you prefer). A sprinkle of sharp cheddar on top melts into a bubbly finish. Serving this classic dip in individual tortilla cups keeps things neat while delivering all the flavor of a communal dip in a convenient handheld package.
If you can’t wait for football season, make them for Taco Tuesday, a summer party, or as an appetizer for a crowd. They hold up well on a buffet and are easy to reheat if you want to prep ahead.

Ingredients
- 6 “fajita size” 6-inch flour tortillas
- 2 cups cooked and shredded chicken breasts
- 3/4 cup buffalo sauce (adjust to taste)
- 8 oz cream cheese, softened
- 1/4 cup bleu cheese dressing (or ranch dressing if preferred)
- 1 cup cheddar cheese, grated
Instructions
- Preheat the oven to 375°F (190°C).
- Wrap the tortillas in damp paper towels and heat them in the microwave for 30–45 seconds to make them pliable.
- Press each warmed tortilla into a 4-inch diameter ramekin or small bowl to form a cup shape.
- Bake the tortilla cups in the preheated oven for about 12 minutes, until they are crisp and golden.
- While the tortillas bake, combine the shredded chicken and buffalo sauce in a large bowl; toss until the chicken is evenly coated. Set aside.
- In a separate bowl, mix the softened cream cheese and bleu cheese dressing until smooth.
- When the tortilla cups are ready, remove them from the oven. Spoon about half of each cup with the cream cheese mixture, then add a generous portion of the buffalo chicken.
- Top each filled cup with a sprinkle of grated cheddar cheese.
- Place all taco cups on a baking sheet and return to the oven for 7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and allow the cups to cool slightly before serving. Garnish with chopped green onions, celery, or a drizzle of extra dressing if desired.

Tips and Variations
- For a milder version, swap buffalo sauce for a milder wing sauce or reduce the amount used. Use ranch dressing in place of bleu cheese dressing if you prefer a creamier, less tangy base.
- To make these gluten-free, use small gluten-free tortillas or crisp corn tortillas that have been warmed and shaped carefully; note that corn tortillas may be more fragile, so handle gently.
- Make ahead: you can assemble the cups up to the point of baking the final cheese topping and refrigerate. Add the cheese and finish baking just before serving.
- Air fryer option: press tortillas into silicone molds or small oven-safe bowls and air fry at 360°F for 6–8 minutes to crisp the cups faster.
- For extra crunch and color, top with thinly sliced celery, chopped green onions, or a sprinkle of chopped cilantro before serving.

These Buffalo Chicken Dip Taco Cups are an easy, flavorful twist on a classic party dip. They’re portable, portion-controlled, and customizable, making them an excellent choice for gatherings of all kinds. If you make them, consider sharing your experience and any tweaks you tried — they’re a great base for experimenting with different cheeses, sauces, and toppings.
