This Bacon Tomato Avocado Grilled Cheese blends classic comfort with bright, fresh flavors. Crunchy, smoky bacon pairs with silky mashed avocado, sweet tomato slices and nutty gruyère for a sandwich that’s both indulgent and balanced. It’s a great way to celebrate National Grilled Cheese Day or to upgrade an everyday lunch or dinner.
I recently shared this sandwich during an appearance on Good Day Sacramento, and I love how easy it is to make at home. The recipe comes together quickly—about 20 minutes total—and is ideal when you want something satisfying without a lot of fuss.

How to make it
To build this elevated BLT-style grilled cheese, start by cooking the bacon until it’s crisp. You can cook bacon on the stove in a large skillet, or bake it on a sheet pan in the oven for even crispiness and easy cleanup. Once the bacon is done, layer the sandwich on buttered bread with shredded gruyère, fresh spinach, sliced tomato and mashed avocado.
Toast the sandwich in a skillet or on a griddle over medium heat until the bread is deep golden and the cheese is melted—about 2–3 minutes per side. Press gently with a spatula for an even sear. Let the sandwich rest a minute before slicing so the filling settles and you get clean halves.

What to serve with it
This grilled cheese is rich and filling, so crisp, salty or bright sides work well. Try any of the following:
- Baked sweet potato tots
- Rosemary parmesan sweet potato fries
- Old Bay–seasoned fries (crab fries)
- Crispy smashed potatoes
- Air fryer french fries
For a classic combo, pair the sandwich with a warm bowl of soup. Creamy vegetable or tomato-based soups provide a comforting contrast and make the meal feel complete.
- Broccoli cheddar soup
- Roasted tomato soup
- Sweet potato soup
- Parsnip soup
