These brownies have replaced my go-to recipe — I find myself reaching for this one every time. For extra indulgence, I drizzle a homemade bourbon caramel sauce over the top.   • ¾ cup unsweetened cocoa powder
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup dark chocolate chunks or chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan or line it with parchment paper.
  • Melt the beef tallow in a large saucepan over medium-low heat. Whisk in the unsweetened cocoa powder until smooth, then remove the pan from the heat.
  • Stir in the sugar and vanilla extract until well combined. Add the eggs one at a time, mixing thoroughly after each addition until the batter is smooth.
  • Fold in the flour, baking powder, and salt until just combined. Stir in the dark chocolate chunks.
  • Pour the batter into the prepared pan and spread it evenly. Bake for 30 minutes, or until a toothpick inserted near the center comes out with only a few moist crumbs. Cool completely on a wire rack before cutting into 9 squares.

Notes

  • To make the bourbon caramel sauce:
    1. Heat 1 cup granulated sugar in a medium saucepan over medium heat, stirring constantly until it melts into an amber liquid.
    2. Remove from heat and stir in 6 tablespoons butter until melted and smooth.
    3. Slowly drizzle in ½ cup heavy cream while stirring continuously.
    4. Stir in 1 teaspoon vanilla extract, 2 tablespoons bourbon (optional), and 1 teaspoon sea salt. Whisk until fully combined. Serve warm or cool to room temperature; the sauce will thicken as it cools. Store extra sauce in an airtight container in the refrigerator for up to 2 weeks.
