Crispy Southwestern Egg Rolls Recipe with Avocado Dip

This copycat recipe for Southwestern Egg Rolls is cheesy, full of bold southwest flavors, and even better than Chili’s version. They crisp up beautifully in the air fryer but can also be baked or pan-fried. The filling combines seasoned chicken, black beans, corn, spinach, jalapeño, fresh cilantro and plenty of melty pepper jack cheese.

Bring the flavor of Chili’s to your kitchen!

I still remember when Chili’s opened in my hometown — it felt like a big event. I worked there in high school and learned to love the appetizers, especially the sampler platter. These southwestern egg rolls are my take on that crowd-pleasing classic. After testing and refining this recipe until it hit the right balance of spice, texture, and melty cheese, I knew they were ready to share.

They’re perfect as a game-day snack, party appetizer, or part of a homemade sampler platter alongside items like boneless wings, mozzarella sticks, or sliders.

Key ingredients and substitution ideas

Below are the ingredients that give these Southwestern Egg Rolls their signature flavor, plus easy swaps if you need them. The full ingredient list with measurements follows in the recipe card.

  • Jalapeños – Add heat and freshness. Omit for milder flavor or swap for serrano peppers for more spice.
  • Frozen spinach – Thawed and drained works well. If using fresh spinach, wilt it in a skillet first and squeeze out excess liquid.
  • Chicken breast – Use cooked diced or shredded chicken, leftover rotisserie chicken, or replace with seasoned ground beef, soy chorizo, or extra beans for a vegetarian version.
  • Black beans and corn – Canned, drained, and rinsed is convenient. You only need small amounts for the filling, so the leftovers are great in salads, tacos, or salads.
  • Pepper jack cheese – Melts beautifully and adds mild heat. Monterey jack, cheddar, or a blend will also work.
  • Six-inch flour tortillas – These are labeled as fajita or taco-size tortillas and are pliable for rolling. For gluten-free, use soft rice-flour tortillas designed for rolling.
  • Avocado ranch (optional) – A creamy dipping sauce that complements the flavors, but plain ranch, cilantro-lime sauce, or chipotle sauce are also excellent choices.

Instructions

These steps walk you through cooking the chicken, preparing the filling, assembling the egg rolls, and the three cooking methods: air fry, oven bake, or pan fry. Use the ingredient list below for exact quantities.

Cook the chicken

  1. Place a boneless chicken breast on a cutting board and cover with plastic wrap. Pound to about 1/2 inch thickness with a meat mallet or rolling pin to tenderize and speed cooking.
  2. Rub the chicken with taco seasoning. Heat 1 teaspoon olive oil in a skillet over medium-high heat and cook the chicken 4–5 minutes per side, until it reaches 165°F (74°C).
  3. Remove from heat and dice the cooked chicken into small pieces.

Prepare the filling

  1. In the same skillet, heat 1 tablespoon olive oil over medium-high heat. Add minced red onion, diced red bell pepper, and minced jalapeño; sauté 3–4 minutes until softened.
  2. Add thawed and drained chopped spinach, rinsed black beans, drained corn, diced chicken, chopped cilantro and additional taco seasoning. Stir to combine and remove from heat.
  3. Stir in shredded pepper jack until the mixture is evenly coated and melty.

Assemble the egg rolls

  1. Wrap tortillas in a damp paper towel and microwave for 1 minute to make them pliable.
  2. Spoon about 1/2 cup of filling into the center of each tortilla. Fold the short ends over the filling, then roll tightly to enclose.
  3. Repeat until you have 12 rolled egg rolls.

Air fryer method

  1. Arrange egg rolls seam-side down in the air fryer basket with space for air circulation. A medium basket typically fits 6 at a time.
  2. Lightly spray with nonstick cooking spray and air fry at 400°F (200°C) for 4–5 minutes.
  3. Flip, spray again, and air fry 4–5 more minutes until golden and crisp.

Oven bake method

  1. Preheat oven to 425°F (220°C). Use convection if available.
  2. Place egg rolls seam-side down on a baking sheet and lightly spray. Bake 6–7 minutes, flip, spray, and bake another 6–7 minutes until evenly browned.

Pan fry method

  1. Pour enough neutral oil into a large skillet to reach about 1/2 inch deep (start with about 1 cup and add more if needed). Heat over medium-high until shimmering.
  2. Fry egg rolls in batches, 2–3 minutes per side, until golden and crisp. Transfer to a wire rack over paper towels to drain excess oil and keep them crispy.

To serve: Slice egg rolls in half and serve warm with avocado ranch or your favorite dipping sauce.

What to serve with them

Turn these Southwestern Egg Rolls into a full Tex-Mex spread by pairing them with Mexican rice, street corn (elote), queso dip, seasoned potatoes, or black beans. They’re also great as part of a party sampler with wings, sliders, or mozzarella sticks.
