These bites are designed to be approachable: only four main ingredients and minimal prep. You can easily scale the recipe up or down by using one or two sheets of puff pastry, and the filling can be tweaked for milder or spicier tastes. - Puff pastry dough – Use one sheet to make about 24 bites or two sheets to make about 48 bites. Defrost the puff pastry before starting: remove it from its packaging and leave it on a cutting board at room temperature for 30–40 minutes so it becomes pliable.
- Cream cheese – 8 ounces (softened). Soften the cream cheese by leaving it at room temperature for about 30 minutes, ideally while the puff pastry defrosts.
- Hot sauce – About 1/4 cup of a dill-pickle flavored hot sauce if you have it, or regular hot sauce to taste. Omit the hot sauce if you prefer no heat.
- Dill pickles – About 1 cup minced pickles, divided. Use whole pickles, slices, or spears—mince them to the desired texture.
Instructions
Below are clear, step-by-step directions to make these puff pastry pickle bites. Adjust quantities as needed using the ingredient list above.


- Preheat the oven to 375°F (190°C).
- Prepare the puff pastry cups. On a lightly floured surface, gently roll one sheet of defrosted puff pastry to slightly thin it. Cut the sheet into 24 equal small squares. Press each square into a mini muffin tin to form a cup. Repeat with a second sheet if making more bites.
- Bake the shells. Place the filled mini muffin tins in the preheated oven and bake for 12 minutes, or until golden and puffed. Remove from the oven and let cool slightly.
- Make the creamy pickle filling. While the shells bake, combine the softened cream cheese with the hot sauce and 1/2 cup minced pickles in a mixing bowl. Taste and add more hot sauce or pickles if you’d like a stronger flavor.

You can prepare components in advance to streamline party prep. Make the creamy pickle filling up to 5 days ahead and keep it refrigerated in an airtight container. You can also bake the puff pastry shells (unfilled) ahead of time—bake the shells for 12 minutes, cool them, and store in an airtight container at room temperature for up to 2 days. When guests arrive, simply fill the shells and reheat briefly for a fresh, warm appetizer in about 15 minutes.
Storage and reheating
Store leftover filled or unfilled pickle bites in an airtight container in the refrigerator for up to 7 days.
To reheat while keeping the pastry crisp, use an air fryer or an oven:
