Creamy Slow Cooker Thai Peanut Chicken Noodles

Thai Peanut Chicken Noodles are a must-try slow cooker meal — simple to prepare, loaded with bold flavor, and destined to become a family favorite.

Slow Cooker Thai Peanut Chicken Noodles

I’m a big fan of Thai peanut sauce. Over the years I’ve used it in many dishes — from grilled chicken skewers to pizzas and Buddha bowls — and each time it brings rich, creamy, slightly sweet and savory depth to the plate. This recipe turns that beloved sauce into a hands-off slow cooker dinner: tender chicken and vegetables simmered in a peanut-coconut curry, finished with rice noodles that soak up every bit of the sauce.

The method is effortless: blend the peanut-coconut sauce, pour it over the chicken and vegetables in the slow cooker, and let it simmer for several hours. When the chicken is ready, shred it and stir in rice noodles a few minutes before serving so they cook gently in the sauce. The result is a comforting, restaurant-quality meal with almost no hands-on time.

What you’ll need

  • 1 lb boneless, skinless chicken breasts
  • 1 cup onion, large dice
  • 1 cup carrots, large slices
  • 1 cup red bell pepper, large dice
  • 1 can (14 oz) coconut milk
  • 1/2 cup creamy peanut butter
  • 1/4 cup Thai red curry paste
  • 2 tbsp apple cider vinegar
  • 2 tbsp soy sauce (use tamari for gluten-free)
  • 1/4 cup brown sugar
  • 1 tbsp fresh lime juice
  • 2 cups chicken broth
  • 8 oz rice noodles
  • Optional toppings: chopped peanuts, fresh cilantro, sliced green onions, lime wedges

Note: Coconut milk, Thai red curry paste, rice noodles and similar ingredients are typically found in the Asian foods aisle of most grocery stores.

Step by step instructions

  1. Place the chicken breasts, diced onions, sliced carrots and diced red bell pepper into the slow cooker.
  2. In a blender or food processor, combine the coconut milk, peanut butter, Thai red curry paste, apple cider vinegar, soy sauce, brown sugar and lime juice. Blend until smooth and creamy.
  3. Pour the blended peanut-coconut sauce into the slow cooker and add the chicken broth. Stir gently to combine.
  4. Cover and cook on low for about 6 hours, until the chicken is tender and cooked through.
  5. About 15–20 minutes before serving, remove the chicken breasts, shred them with two forks, and return the shredded chicken to the slow cooker.
  6. Add the rice noodles to the slow cooker, cover, and continue to cook on low for 15–20 minutes or until the noodles are tender and have absorbed much of the sauce. Stir occasionally so the noodles cook evenly and don’t clump.
  7. Serve hot, topped with chopped peanuts, fresh cilantro and green onions. Pass lime wedges at the table for a bright squeeze of fresh citrus.

Tips, variations and serving suggestions

  • For extra protein or variety, swap chicken for shredded rotisserie chicken, boneless skinless thighs, or cooked turkey meatballs.
  • Adjust heat by adding or reducing the red curry paste. If you prefer milder, use less paste; for more heat, add extra or a pinch of chili flakes.
  • Make it gluten-free by choosing tamari instead of regular soy sauce and confirming your curry paste does not contain wheat-based ingredients.
  • If you like more vegetables, add snap peas, broccoli florets or baby corn in the final 45–60 minutes of cooking so they retain some texture.
  • To keep noodles firmer, cook them separately according to package instructions and toss with the sauce and shredded chicken just before serving.

Storage and make-ahead

This dish stores well in the refrigerator for 3–4 days in an airtight container. Rice noodles tend to soften as they sit, so if you plan to eat leftovers, consider cooking the noodles separately and combining them when reheating to preserve texture. The sauce and shredded chicken can be reheated gently on the stove or in the microwave; add a splash of broth or coconut milk if the sauce has thickened.
