Breakfast Burrito Recipe: Eggs, Cheese & Fresh Salsa

After tasting dozens of breakfast burritos over the years, I’m sharing my perfected method for making the BEST Breakfast Burrito at home. This version balances cheesy scrambled eggs, crispy tater tots, crunchy bacon and creamy avocado to deliver a truly epic breakfast experience.

I’m a huge breakfast-burrito fan—if it’s on the menu, I’ll order it. Over the years I’ve tried more than 100 restaurant versions and discovered a simple truth: the best breakfast burritos are about contrast. You want creamy elements paired with crunchy ones so every bite is interesting.

In this recipe the creamy components are the cheesy scrambled eggs and avocado; the crunchy elements are crispy bacon and tater tots. Combined, they create a flavorful, well-textured burrito that’s easy to make at home.

Ingredients

  • Frozen tater tots (about 18 tots)
  • Eggs (8 large)
  • Milk (¼ cup; 2% used here; 1%, whole or non-dairy alternative also work)
  • Salt (½ teaspoon)
  • Black pepper (½ teaspoon)
  • Shredded cheese (1 cup; cheddar, pepper jack, or a blend)
  • Burrito-size flour tortillas (2; about 12 inches wide)
  • Cooked, crumbled bacon (½ cup) — oven-baked, air fried or pre-cooked pieces
  • Green onions (¼ cup, diced)
  • Avocado (½, thinly sliced) — optional but recommended

Instructions

  1. Cook the tater tots and bacon.

    Prepare frozen tater tots according to package directions in the oven, an air fryer, or deep fryer until very crispy. If you don’t have pre-cooked bacon, cook strips in the oven at 400°F for about 20 minutes on a wire rack set over a foil-lined sheet, or use an air fryer or skillet. Let bacon cool and crumble or chop.

  2. Make the cheesy scrambled eggs.

    Whisk eggs with milk, salt and pepper in a medium bowl. Heat a large skillet over medium-high heat and lightly coat with cooking spray or a bit of oil. Pour in the eggs and gently scramble for 6–8 minutes, aiming for soft, slightly underdone curds; turn off the heat when eggs are still soft but not runny. Sprinkle the shredded cheese over the eggs and fold gently until melted. Remove from heat and set aside.

  3. Warm the tortillas and assemble.

    Heat each flour tortilla in a dry skillet over high heat for 15–20 seconds per side to make them pliable. Place the tortilla flat, add the cheesy eggs in the center, then top with diced green onions, crumbled bacon, crispy tater tots and avocado slices.

  4. Roll and toast the burrito.

    Fold the tortilla sides over the filling, then roll tightly from one edge to the other. Heat a skillet over high heat, spray or brush lightly with oil, and place the burrito seam-side down. Toast 30–60 seconds per side until the tortilla is lightly browned and sealed. Slice in half and serve hot.

What to serve with it

Slice the burrito in half and serve with your favorite hot sauce, salsa, sour cream or guacamole. A bright salsa or creamy chipotle sauce pairs especially well to cut the richness of the eggs and bacon.

What else can you put in it?

Keep the cheesy eggs and tater tots for texture contrast, then customize however you like. A few ideas:

  • Swap bacon for chorizo or soyrizo (4–6 ounces cooked) for a spicy, savory option.
  • Use breakfast sausage (4–6 ounces cooked) instead of bacon.
  • Add black beans (¼ cup per burrito) for extra protein and fiber.
  • Include sliced fresh jalapeños or a can (4 ounces) of diced green chiles mixed into the eggs for heat.
  • Make it vegetarian by omitting meat and adding beans, sautéed vegetables, or soyrizo.

Tips and tricks

  • These burritos freeze well. Do not add avocado before freezing (it will brown). Wrap each finished burrito in foil, place in a freezer-safe bag and freeze up to 1 month.
  • To reheat from frozen in the oven, keep the burrito wrapped in foil and bake at 350°F for 20–30 minutes. If thawed overnight in the fridge, it will heat faster.
  • To reheat in the microwave, remove foil and microwave on a plate for 2–3 minutes, or until hot throughout.
  • Store made-ahead burritos in the refrigerator up to 4 days. Reheat in the microwave for 1–2 minutes or in a skillet 2–3 minutes per side.
  • This recipe yields two burritos; scale ingredients as needed to make more for meal prep.
