- 2 cups diced watermelon
- 1 cup cherry tomatoes, quartered

Instructions
- Prepare the Watermelon Serrano Salsa: In a large bowl, combine the diced watermelon, quartered cherry tomatoes, diced red onion, minced serrano peppers, chopped mint and cilantro, lime zest and lime juice. Season with salt and black pepper. Stir gently to combine and transfer the salsa to the refrigerator to chill while you cook the chorizo.

- Assemble the tostadas: Place a portion of cooked chorizo on each tostada shell. Spoon a generous amount of the chilled watermelon serrano salsa over the chorizo, then sprinkle with crumbled queso fresco.
- Make the avocado cream sauce: In a blender or food processor, puree the avocado with the lime juice and cilantro until smooth. If the mixture is too thick, add a splash of water or more lime juice to reach a drizzleable consistency. Drizzle the avocado cream over each tostada.
