Instructions
Follow these steps for four delicious onion fried burgers. Prepare buns and any toppings before you cook—these burgers are best served hot straight from the griddle.


- Slice the onions. Thinly slice yellow onions with a sharp knife or mandoline to ensure even, quick cooking.
- Season and portion the meat. Mix ground beef with salt and pepper, then divide into four equal balls (about a quarter pound each).
- Heat the griddle or skillet. Preheat a flat top, griddle, or large cast-iron skillet over medium-high heat.
- Toast the buns. Add about 1/2 teaspoon oil to the hot surface and toast the cut sides of the buns until lightly browned—this only takes about a minute. Set aside.
- Smash the patties. Place each ball on the hot surface and use the back of a large flat metal spatula to smash it thin. Cook 1 minute to develop a good sear.
- Add the onions. Pile about 1/2 cup of thinly sliced onions onto each smashed patty. It looks like a lot, but the onions collapse as they cook.
- Smash the onions in and flip. Press the onions into the meat, then carefully flip each burger so the onions are now underneath. Cook 3–4 minutes until the meat is cooked and the onions are caramelized.
- Melt the cheese. Add a slice of cheddar or American cheese and allow it to melt for 1–2 minutes.
- Assemble and serve. Use your spatula to transfer each burger onto the toasted bottom bun with the caramelized onions facing up. Add the top bun and serve immediately.






Tip: Don’t be shy with the onions. Pile on roughly 1/2 cup of thinly sliced onions per burger before smashing them into the meat — they cook down and become the star of the sandwich.

Instructions
