These brownies have replaced my go-to recipe — I find myself reaching for this one every time. For extra indulgence, I drizzle a homemade bourbon caramel sauce over the top. Tip: If you prefer not to use alcohol, omit the bourbon; the sauce will still be wonderful.

- 1 cup beef tallow
- ¾ cup unsweetened cocoa powder
- 2 cups sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup dark chocolate chunks or chocolate chips

Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan or line it with parchment paper.

Melt the beef tallow in a large saucepan over medium-low heat. Whisk in the unsweetened cocoa powder until smooth, then remove the pan from the heat.

Stir in the sugar and vanilla extract until well combined. Add the eggs one at a time, mixing thoroughly after each addition until the batter is smooth.
