How to make them

  1. Preheat the oven to 350°F (175°C).
  2. Prepare one 15.25-ounce box of chocolate cake mix according to package directions, or use your preferred chocolate cupcake recipe.
  3. Line four standard 12-count muffin tins with 48 cupcake liners. If you don’t have enough pans, bake in batches.
  4. Use one tablespoon of batter per liner — this size creates the best cake-to-ice-cream balance. Bake about 14 minutes, or until a toothpick comes out clean.
  5. Transfer baked cupcakes to a rimmed baking sheet and place them in the freezer for 30 minutes to firm up.
  6. Scoop softened ice cream onto each frozen cupcake. The ice cream should be softened enough to shape but not melted; remove pint containers from the freezer about 10–15 minutes before scooping.
