What is Tom Kha? Tom Kha is a Thai coconut soup traditionally made with coconut milk, lemongrass, galangal or ginger, Thai chiles, mushrooms, fish sauce and lime juice. It’s usually prepared with chicken but can also feature shrimp, pork or tofu. Compared with Tom Yum, Tom Kha is creamier and leans sweeter and more savory thanks to the coconut milk.

- Simmer aromatics: In a large pot over high heat combine whole garlic cloves, a one-inch piece of ginger, and lemongrass pieces with lime zest, red curry paste and chicken broth. Bring to a boil, then reduce heat to medium and simmer 5–7 minutes to infuse the broth.
- Remove the aromatics: Use a slotted spoon to remove and discard the garlic, ginger and lemongrass.
- Add coconut milk and vegetables: Stir in fish sauce and the coconut milk, then add diced onion, sliced shiitake mushrooms and frozen potstickers. Simmer on medium for 8–10 minutes, until mushrooms are tender and potstickers are heated through.
- Finish and serve: Stir in fresh lime juice and chopped cilantro. Serve immediately, garnished with lime wedges, sliced green onions, fresh cilantro leaves and optional thinly sliced Thai chilies or a drizzle of chili crisp.

How to reheat the soup
The soup reheats easily, but potstickers can become soft after refrigeration. For best texture, store leftover soup and any unused frozen potstickers separately.
Stovetop: Warm the soup in a pot over medium-high heat until it simmers, then add frozen potstickers and cook 8–10 minutes until heated through.
Microwave: Cook potstickers first in a microwave-safe dish with 1/4–1/3 cup water for 6–8 pieces, covered, on high for about 2 minutes. Remove, then microwave the soup for about 2 minutes and combine.

Gluten free option
The soup base without potstickers is naturally gluten free. Check labels on fish sauce and curry paste to confirm they contain no gluten.
If making this soup gluten-free, substitute sliced chicken breast or rice noodles for the potstickers. Add raw chicken to the simmering soup at the same point you would add potstickers so it cooks through. For rice noodles, add them about 4 minutes after the mushrooms and cook 4–6 minutes.
