This recipe is inspired by popular slow-cooker French onion dishes. It takes ordinary chicken breasts and transforms them into a juicy, tender, and deeply savory main course. For even more richness, use boneless, skinless chicken thighs instead of breasts. After a straightforward 20-minute prep, the slow cooker does the rest — you’ll come home to a fragrant kitchen and a satisfying meal.

Key ingredients and substitution ideas

Below are the main ingredients and why they matter. Full measurements are available in the recipe card further down.

  • French onion mix – a blend of onion powder, garlic powder, salt, and pepper adds the classic French onion flavor. You can use a store-bought French onion soup or dip mix or a homemade mix.
  • Chicken breasts or thighs – boneless, skinless breasts make a lighter dish; boneless, skinless thighs keep the chicken juicier and more forgiving in the slow cooker. If using breasts, pound or slice them to an even ½ inch thickness for consistent cooking.
  • Onions and garlic – thinly sliced onions caramelized in butter build the recipe’s signature savory-sweet base; garlic brightens the flavor.
  • Chicken broth and Worcestershire sauce – these create a savory braising liquid that becomes the gravy after thickening.
  • Cornstarch – used to make a quick slurry to thicken the cooking liquid into a glossy gravy. You can substitute all-purpose flour (about twice the amount) if necessary.

Step 7: Remove the thyme sprigs, take the chicken out, whisk a cornstarch slurry into the slow-cooker liquid on high to thicken, then return the gravy to the chicken or pour it over when serving.

What to serve with it

Mashed potatoes are my top pick — spoon the French onion gravy over both the chicken and potatoes for a classic comfort-food pairing. This chicken also goes well with rice, egg noodles, or roasted vegetables like green beans or Brussels sprouts.

How to make it on the stove

If you need dinner sooner, this dish can be completed on the stovetop in under an hour. Follow these condensed steps for a skillet version:

  1. Melt butter in a large skillet over medium-high heat. Add sliced onions and caramelize for about 10 minutes.
  2. Add garlic and cook for 1 minute. Move the onions to one side of the pan.
  3. Season the chicken with the French onion mix, then sear in the skillet 2 minutes per side until golden.
  4. Add chicken broth, Worcestershire sauce, and thyme. Bring to a simmer, cover, and cook 15–20 minutes until cooked through.
  5. Remove chicken and thyme sprigs. Whisk cornstarch with water, add to the pan, and boil until the gravy thickens, about 3–5 minutes.
  6. Serve the chicken topped with the onion gravy.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 cups thinly sliced onions (about 1 large yellow onion)
  • 4 cloves garlic, minced
  • 2 tablespoons French onion mix (see recipe)
  • 2 pounds chicken breasts, pounded to ½ inch thickness (or chicken thighs)
  • 1 cup chicken broth
  • 2 tablespoons Worcestershire sauce
  • 3 sprigs fresh thyme
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Add butter to a large skillet over medium-high heat. When melted, add the onions and caramelize about 10 minutes.
  2. Add garlic and sauté 1 more minute, then transfer the onions and garlic to the slow cooker.
  3. Rub the French onion mix over the chicken breasts.
  4. Sear the chicken in the same skillet 2 minutes per side until golden, then transfer to the slow cooker in a single layer.
  5. Add chicken broth, Worcestershire sauce, and thyme to the slow cooker. Cook on high 3–4 hours or low 7–8 hours.
  6. When the chicken is done, remove and discard thyme sprigs. Place the chicken on a plate and cover with foil.
  7. Turn the slow cooker to high if it isn’t already. Whisk cornstarch and water together, stir into the cooking liquid, cover, and cook 5 minutes until the gravy thickens.
  8. Serve the chicken topped with the French onion gravy, or return the chicken to the slow cooker with the gravy until ready to serve. Garnish with chopped parsley if desired.

Notes

  • Do not add frozen chicken directly to the slow cooker. Thaw in the refrigerator 1–2 days ahead or use the microwave defrost setting before cooking.
  • To add melted cheese, remove the cooked chicken and place on a foil-lined sheet, top each piece with about ½ cup shredded gruyere, Swiss, or mozzarella, broil 1–2 minutes until melted, then plate and spoon on the gravy.
  • Store leftovers in an airtight container in the refrigerator for up to 6 days.
