Roasted Tomato and Kale Polenta Skillet

As a food blogger, I get three questions more than any others: how do you earn a living, what’s your favorite recipe, and how do you keep creating new dishes? I’ll spare the long answer about blogging here and focus on the food — specifically the dish that came from a spur-of-the-moment “what’s left in the fridge” moment and turned out to be one of my favorites.

I had planned a photographed lunch to impress a visiting photographer friend, but after a scheduling delay I ended up with no time to shop. Instead of the elaborate menu I’d imagined, I pulled together what I had on hand: prepared polenta, a handful of cheeses, a bunch of kale and a container of cherry tomatoes. Simple preparation, a hot oven and a cast-iron skillet later, and the Tomato Kale Polenta Skillet was born.

The result is a satisfying contrast of textures and flavors: a rich, creamy polenta base made even silkier with mascarpone and parmesan; bright, sweet roasted tomatoes; and tender but slightly crisp kale tossed with garlic, olive oil and balsamic vinegar. It’s a single-dish meal that looks beautiful on the table and is easy enough for a weeknight while still feeling special.

  • 2 cups cherry tomatoes

Tomato Kale Polenta Skillet Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, stir together the prepared polenta with the mascarpone and parmesan until smooth and well combined.
  3. Spread the polenta mixture evenly across the bottom of an oven-safe skillet or cast-iron pan to form a thick base.
  4. In a separate large bowl, toss the chopped kale, cherry tomatoes, minced garlic, olive oil, balsamic vinegar, salt and pepper until the vegetables are evenly coated.
  5. Arrange the kale and tomato mixture over the polenta layer in the skillet, spreading it gently so the tomatoes are distributed across the surface.
  6. Bake in the preheated oven for 25–30 minutes, or until the tomatoes are roasted and the kale is slightly crisped.
  7. Remove from the oven and sprinkle the chopped fresh basil over the top before serving.

Serve warm straight from the skillet. A big spoonful yields creamy polenta with pockets of melted cheese and bursts of juicy tomato, balanced by the earthy, slightly bitter kale. This dish is hearty enough to be a main for vegetarians but also works as a flavorful side.

Tips, Variations and Storage

If you don’t have mascarpone, cream cheese or ricotta can be a substitute for a similar creamy texture. Swap parmesan for pecorino if you prefer a sharper, saltier finish. For added protein, stir in cooked white beans or top with a fried or poached egg when serving. Leftovers keep well in the refrigerator for 2–3 days; reheat gently in the oven or in a skillet to maintain the texture.
