This Instant Pot Buffalo Chicken was one of my earliest pressure cooker recipes and it remains a go-to for busy weeknights. It’s fast, forgiving, and incredibly versatile. The combination of a simple chicken wing seasoning and your favorite buffalo sauce produces deeply flavored shredded chicken that can be used in countless dishes.

One of the best features of this method is that you can cook frozen chicken straight from the freezer — no thawing required. Use bone-in or boneless chicken, breasts or thighs; adjust the cook time slightly depending on the cut and whether the chicken is frozen or fresh.

  • Chicken – skinless chicken breasts or thighs, fresh or frozen; boneless or bone-in. For fresh boneless breasts, cook 10 minutes; for bone-in, thighs, or frozen chicken, add about 2 minutes to the cook time.
  • Buffalo sauce – use your favorite wing sauce; a 12-ounce bottle is a good measure for about 2 pounds of chicken.
  • Chicken wing seasoning – a simple blend of spices elevates the flavor. If you don’t have a prepared mix, season with 1 teaspoon salt, 1 teaspoon chili powder, and 1 teaspoon garlic powder per pound as a quick substitute.

Instructions

Photos above illustrate each step. The method is straightforward and ideal for meal prep.

  1. Season the chicken evenly with the chicken wing seasoning and place the pieces in the Instant Pot in a single layer if possible.
  2. Pour the buffalo sauce over the chicken so it’s well coated.
  3. Secure the lid and set the steam release to “sealing.” For bone-in breasts, frozen chicken, or thighs, pressure cook on HIGH for 12 minutes. For fresh boneless breasts, pressure cook on HIGH for 10 minutes.
  4. When the cook cycle ends, allow a natural pressure release for 10 minutes. After 10 minutes, move the valve to “venting” to release any remaining pressure, then open and remove the lid.
  5. Transfer the cooked chicken to a cutting board and shred it with two forks or meat shredders. Return the shredded chicken to the Instant Pot and toss it in the sauce to coat.
  6. Serve immediately, or keep warm in the pot until ready to use. Store leftovers in an airtight container in the refrigerator.

Recipe tips

  • Yield: One pound of raw chicken yields about 2 cups of shredded cooked chicken. Plan servings by weight rather than by number of breasts.
  • Scaling: This recipe adapts from 1 pound up to 6 pounds in a 6-quart Instant Pot. If using 1 pound, halve the seasoning and sauce. If increasing volume, scale the seasoning and sauce proportionally and ensure there’s enough liquid in the pot to avoid the burn warning.
  • Timing: Total time is roughly 25–30 minutes: 6–10 minutes to reach pressure, 10–12 minutes cooking, and a 10-minute natural release.
  • Frozen chicken: No defrosting required. Add about 2 extra minutes to the cook time for frozen pieces.
  • Creamy version: Stir in ½ cup ranch or blue cheese dressing after shredding for a richer, creamier buffalo chicken.
  • Storage: Cooked shredded chicken keeps up to 5 days in the refrigerator or up to 6 months frozen in an airtight container.

This shredded buffalo chicken is extremely versatile and makes planning lunches and dinners simple. For each pound of chicken, plan on about 3/4 cup of buffalo sauce in the pot; two pounds will use about 1½ cups (a standard 12-ounce bottle).
