There’s something timeless about a Sloppy Joe—sweet, tangy, and satisfying. This recipe takes that childhood favorite and upgrades it with fresh vegetables, a balanced sauce, and slow-cooking for deep flavor. Making the meat in a crock pot yields tender, hands-off sloppy joe filling that’s perfect for weeknights, parties, or game day. Serve on Hawaiian rolls or classic slider buns and add crispy onions for crunch.

Sloppy Joe Sliders Ingredients

  • 1 tbsp olive oil
  • 1 cup onion, diced
  • 1 cup red bell pepper, diced
  • 1 cup green bell pepper, diced
  • 2 lbs ground beef
  • 1 ½ cups ketchup
  • 1 tbsp mustard
  • 2 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • ½ tsp salt
  • 1 tsp ground pepper
  • 24 Hawaiian rolls or slider buns
  • 1 cup crispy fried onions (optional topping)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and both bell peppers and cook 3–4 minutes, until they begin to soften.
  2. Add the ground beef to the skillet and cook until browned and cooked through, breaking it up as it cooks.
  3. Drain any excess grease, then transfer the cooked beef and vegetables to a crock pot.
  4. Add the ketchup, mustard, brown sugar, garlic powder, chili powder, salt and pepper to the crock pot and stir until the mixture is well combined.
  5. Cook on high for 3 hours or on low for 6 hours, stirring occasionally if possible. The sauce will meld with the beef and vegetables and thicken slightly as it cooks.
  6. To serve, spoon the sloppy joe meat onto Hawaiian rolls or slider buns and top with crispy onions if desired. Serve warm.

Notes and Tips

  • This recipe scales easily—double the ingredients to feed a larger crowd; it will still fit in most standard crock pots.
  • For a leaner option, use 90/10 ground beef or a plant-based ground substitute. If using plant-based meat, adjust cooking time as needed and taste for seasoning.
  • If you prefer a smoother sauce, briefly pulse a portion of the cooked mixture in a blender or use an immersion blender, then return it to the crock pot and stir.
  • Hawaiian rolls add a touch of sweetness that complements the tangy sauce, but classic slider buns or dinner rolls work well too.
  • Customize toppings: shredded cheddar, pickles, coleslaw or a drizzle of barbecue sauce are all delicious additions.

Storage and Reheating

Store any leftover sloppy joe meat in an airtight container in the refrigerator for up to 3–4 days. Reheat gently on the stove over low heat, stirring and adding a splash of water or broth if needed to loosen the sauce. The filling also freezes well—portion into freezer-safe containers for up to 2–3 months. Thaw in the refrigerator overnight before reheating.

Serving Suggestions

These sliders are ideal for casual gatherings like game day, family parties, or kids’ birthday celebrations. Pair them with simple sides such as coleslaw, potato chips, baked beans, or a crisp green salad. They’re also great on a party platter—set out buns, the warm meat, and an assortment of toppings so guests can assemble their own sliders.
