I recently shared this sandwich during an appearance on Good Day Sacramento, and I love how easy it is to make at home. The recipe comes together quickly—about 20 minutes total—and is ideal when you want something satisfying without a lot of fuss.

How to make it

To build this elevated BLT-style grilled cheese, start by cooking the bacon until it’s crisp. You can cook bacon on the stove in a large skillet, or bake it on a sheet pan in the oven for even crispiness and easy cleanup. Once the bacon is done, layer the sandwich on buttered bread with shredded gruyère, fresh spinach, sliced tomato and mashed avocado.

Toast the sandwich in a skillet or on a griddle over medium heat until the bread is deep golden and the cheese is melted—about 2–3 minutes per side. Press gently with a spatula for an even sear. Let the sandwich rest a minute before slicing so the filling settles and you get clean halves.

Ingredients

  • 4 slices FARMER JOHN® Classic Bacon
  • 2 slices bread (sourdough recommended)
  • 2 tbsp butter, softened
  • ½ cup gruyère cheese, shredded
  • 2 slices tomato
  • ¼ cup fresh spinach leaves
  • ½ avocado, mashed

Instructions

  1. Cook the bacon in a large skillet over medium heat for 8–10 minutes, turning occasionally, until crisp. Transfer to a paper towel-lined plate to drain and cool slightly, then cut each slice in half.
  2. Spread 1 tablespoon of butter on one side of each slice of bread. On the unbuttered side of one slice, layer ¼ cup shredded gruyère, two halved bacon slices, tomato slices and spinach leaves.
  3. Spoon the mashed avocado over the spinach. Top with the remaining two halves of bacon and the rest of the shredded gruyère. Place the other slice of bread on top, buttered side facing out.
  4. Heat a large skillet over medium heat. When hot, add the sandwich and cook 2–3 minutes per side until the bread is golden brown and the cheese has melted. Press gently with a spatula for even contact and a crisp exterior.
  5. Remove from the pan and let rest for a minute. Slice in half and serve immediately for the best texture and flavor.
