No air fryer? Bake the breaded chicken at 425°F on a wire rack over a foil-lined sheet for about 15 minutes, or until golden and cooked through. Using convection if available will help achieve an even crust. Lightly spray the chicken with cooking spray before baking.
Prefer to pan-fry? Heat 1/2 inch of vegetable oil in a skillet over medium-high heat. Once hot, fry the breaded chicken 4 minutes per side, or until golden and cooked through. Drain briefly on paper towels before slicing.

Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1 1/2 teaspoons black pepper, divided
- 1 1/2 cups Caesar dressing, divided
- 1 cup panko breadcrumbs
- 2 tablespoons Italian seasoning
- 8 ounces fettuccine pasta noodles
- 1 cup baby spinach
- 1/3 cup parmesan cheese
Instructions
- Slice each chicken breast in half lengthwise so you have four thinner pieces. Season all pieces on both sides with the salt and 1/2 teaspoon of the black pepper.
- Pour 1/2 cup of the Caesar dressing into a shallow bowl. In a separate shallow bowl, combine the panko breadcrumbs and Italian seasoning. Dip each chicken piece into the dressing, then press into the breadcrumb mixture so the crust adheres. Shake off any excess breadcrumbs.
- Arrange the breaded chicken in a single layer in the air fryer basket. Lightly spray the tops with cooking spray. Air fry at 400°F for 6 minutes, flip, spray again, and air fry for another 6 minutes, until golden and cooked through.
- While the chicken cooks, bring a large pot of salted water to a boil. Cook the fettuccine according to package directions until al dente.
- Before draining, reserve 1/2 cup of the pasta cooking water. Drain the noodles and return them to the pot over medium-low heat. Add the remaining 1 cup Caesar dressing and the reserved 1/2 cup pasta water. Toss until the noodles are evenly coated.
- Add the remaining 1 teaspoon black pepper, the baby spinach and the parmesan. Stir until the spinach wilts and the cheese melts into the sauce.
- Slice the crispy chicken, plate the pasta, and top with the chicken. Garnish with extra parmesan and fresh basil or parsley if desired. Serve immediately.
Notes
- Leftovers: Store cooked chicken in an airtight container in the refrigerator for up to 5 days. Keep leftover pasta separate. Reheat chicken in the air fryer at 400°F for 3–4 minutes; reheat pasta gently in the microwave or on the stove with a splash of water or extra dressing to loosen the sauce.
- Cooking methods: If you don’t have an air fryer, bake the chicken at 425°F on a wire rack for about 15 minutes or pan-fry in 1/2 inch of hot oil, 4 minutes per side, until golden and cooked through.
