How to make it
- Slice the zucchini thinly. Trim the ends from two large zucchinis and slice them lengthwise into thin strips using a sharp knife or mandoline. Arrange half the slices in a single layer across the bottom of a 9” x 13” baking dish.
- Cook the aromatics and beef. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sauté 1 cup diced onion and 1 cup diced bell pepper for 4–5 minutes, then add 1 pound ground beef and cook until browned, about 6–7 minutes. Drain excess fat.

Instructions
