Step by step instructions

  1. Add peeled and seeded avocados to a large bowl and mash them with a fork or potato masher until you reach your desired consistency.
  2. Stir in the minced jalapeño, ground chipotle pepper, ground cumin, paprika and salt. Adjust the chipotle to taste depending on how smoky and spicy you’d like the guacamole.
  3. Squeeze fresh lime juice over the mixture, then fold in chopped cilantro and cooked, crumbled crispy bacon. Serve immediately or chill briefly to let flavors meld.

How to pick avocados for guacamole

Choose avocados that feel slightly soft when you give them a gentle squeeze. They should yield to pressure but not feel mushy. If they’re hard, let them ripen at room temperature. To speed ripening, place avocados in a brown paper bag with an apple or banana for a day or two.

If an avocado leaves a deep indentation when you press it, it may be overripe and brown inside. To extend shelf life once avocados are ripe, store them in the refrigerator; they usually stay at peak ripeness for 3–4 days when chilled.

How to keep guacamole fresh in the fridge

Guacamole can stay fresh for up to three days when stored properly. The key is minimizing exposure to air, which causes browning. Transfer the guacamole to an airtight container and press a piece of plastic wrap directly onto the surface so no air pockets remain. Alternatively, press a thin layer of lime juice over the top before sealing to add extra protection.

Ingredients

  • 4 avocados, peeled and seeded
  • 1 jalapeño pepper, seeded and minced
  • 1 tsp ground chipotle pepper (adjust to taste)
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp salt, or to taste
  • 1 tbsp fresh lime juice, squeezed
  • 3 tbsp fresh cilantro, chopped
  • ½ cup bacon, cooked and crumbled (about 4–6 slices)

Instructions

  1. Add avocados to a large bowl and mash with a fork or potato masher until slightly chunky or smooth, depending on preference.
  2. Add the jalapeño, chipotle, cumin, paprika and salt; stir to combine.
  3. Add lime juice, cilantro and crumbled bacon, then fold gently to incorporate without over-mashing.
  4. Serve immediately, or cover tightly with plastic wrap pressed onto the surface and refrigerate until ready to serve.
  5. Enjoy with tortilla chips, fresh vegetables, or as a topping for tacos, burgers, sandwiches or grilled chicken.

Notes

  • Storing: Store guacamole in the refrigerator up to 3 days. Press plastic wrap directly onto the surface to exclude air and slow browning.
  • Making crispy bacon: For easy oven-baked bacon, arrange 4–6 strips on a wire rack set over a foil-lined sheet pan. Bake at 400°F (205°C) for about 20 minutes, or until crispy. Drain on paper towels, let cool, then crumble.
  • Adjust heat: Keep the seeds to retain more heat from the jalapeño, or omit them for milder guacamole. Vary the chipotle amount for smokiness.
