Why you’ll love these fish tacos

Having lived near San Diego for over 20 years — close to the birthplace of Baja-style fish tacos — I’ve sampled many versions, from upscale seaside restaurants to no-frills taco stands. I developed this air fryer version to capture the spirit of the classic Baja fish taco while keeping the method simple and lighter than traditional deep frying.

Traditional Baja-style tacos are often coated in a wet batter and deep-fried. Because a wet batter doesn’t translate to the air fryer, these tacos use cornmeal to give the fish a light, crunchy coating. The result is not as deeply crunchy as a deep-fried version, but it’s wonderfully flavorful, much lighter, and ready in minutes. Classic toppings — shredded cabbage, creamy fish taco sauce, and fresh pico de gallo — keep the tacos bright and authentic.

You’ll love them because:

  1. Quick and simple: Ready in about 15 minutes with just a few steps, perfect for busy weeknights.
  2. Packed with flavor: The seasoned cornmeal crust plus fresh toppings and a tangy sauce deliver a satisfying balance of crunch, citrus, and spice.
  3. Lighter than frying: The air fryer crisps the fish without deep frying, giving you a lighter plate without sacrificing texture.

Ingredients

Below are the key ingredients for these air fryer fish tacos, with notes on what each one does and substitution ideas. For the exact measurements, see the recipe card further down.

  • White fish – Mahi mahi is my top pick for texture and flavor, but tilapia, cod, or halibut all work well. Choose mild-flavored white fish fillets and slice them into strips for tacos.
  • Fresh-squeezed lime juice – Brightens the fish and adds classic Baja flavor.
  • Avocado oil (or olive oil) – Helps the cornmeal crust adhere and promotes browning in the air fryer.
  • Cornmeal – Creates a light, crunchy coating that crisps up nicely in the air fryer. If you prefer no breading, omit it and simply season the fish.
  • Taco seasoning – Use a store-bought blend or make a quick homemade mix with chili powder, paprika, cumin, garlic powder, onion powder, salt, and a pinch of cayenne for heat.
  • Tortillas – Corn tortillas keep the tacos gluten free; small flour tortillas are also fine if you prefer them softer.
  • Toppings – Classic choices include sliced avocado, shredded cabbage, pico de gallo, and a creamy fish taco sauce. You can also add jicama slaw, mango salsa, shredded lettuce, chopped cilantro, or sliced jalapeños.

  1. Preheat the air fryer to 400°F (200°C).
  2. Slice the fish into strips. Start with two 8-ounce fillets (about 1 pound total) and cut each into 3 strips. Coat the strips on all sides with lime juice and a little avocado oil.
  3. Bread the fish by combining cornmeal and taco seasoning in a shallow bowl. Press each fish strip into the cornmeal mixture so it is lightly coated on all sides.
  4. Air fry the fish on a lightly sprayed air fryer basket or tray, leaving space around each piece for air circulation. Spray the tops lightly with cooking spray if desired. Cook at 400°F for about 8 minutes until golden and cooked through.
  5. Prepare the sauce and warm the tortillas while the fish cooks. Mix sour cream, mayonnaise, lime juice, sriracha (or another hot sauce), garlic powder, and salt to make the creamy fish taco sauce. Heat tortillas on the stove or in the microwave.
  6. Assemble the tacos by placing one strip of cooked fish in each tortilla and topping with avocado slices, shredded red cabbage, pico de gallo, and a drizzle of fish taco sauce. Add extra hot sauce or salsa for more heat.

Serve the tacos with chips and extra pico de gallo for dipping, or pair them with rice and beans for a more substantial meal.

Cook Time: 8 minutes
Total Time: 15 minutes
Author: Whitney Bond

  • 1 tablespoon lime juice
  • 1 teaspoon avocado oil, or olive oil
  • ¼ cup cornmeal
  • 2 tablespoons taco seasoning

For serving

  • 6 corn tortillas, or small flour tortillas
  • 1 avocado, sliced
  • 1 cup red cabbage, shredded
  • 1 cup pico de gallo

  • 1 ½ tablespoons lime juice

  • Combine the cornmeal and taco seasoning in a shallow bowl. Press each strip into the seasoned cornmeal until lightly coated.
  • Lightly spray the air fryer basket with cooking spray. Arrange the breaded fish strips in a single layer with space around them and spray the tops lightly. Cook for 8 minutes at 400°F, or until golden and cooked through.

  • Place one strip of cooked fish in each tortilla and top with avocado, shredded red cabbage, pico de gallo, and a drizzle of fish taco sauce.

Notes

  • Yield: This recipe makes 6 tacos. Plan on 2–3 tacos per person depending on appetite. To double the recipe to make 12 tacos, simply double the ingredient amounts.
  • No-breading option: If you prefer fish without a crust, skip the cornmeal. Coat the strips with lime juice and oil and sprinkle taco seasoning on all sides, then air fry the same way.
  • Do not flip the fish: Fish is delicate and more likely to fall apart when flipped in the air fryer; cook it without flipping for best results.
  • Using frozen fish: If using frozen fillets, thaw them completely in the refrigerator before breading and cooking to ensure they cook through in the recommended time.
  • Dietary note: Served on corn tortillas, these tacos are gluten free.
