Ingredients
- 22 oz box Crazy Cuizine General Tso’s Chicken (chicken in a sealed bag plus sauce packet)
- 2 lbs sweet potatoes, diced
- 1 cup onion, diced
- 1 jalapeño, seeded and minced (adjust to taste)
- 1/2 cup red bell pepper, diced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Chinese five spice
- 1/2 tsp salt
- 1/4 cup green onions, sliced (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Remove the sauce packet from the General Tso’s box and thaw it under warm running water; set aside to heat later.
- Remove the bag of chicken from the box and place it on a baking sheet. Add the diced sweet potatoes, onion, jalapeño, red bell pepper, and minced garlic to the sheet.
- Drizzle the olive oil over the chicken and vegetables. Sprinkle the Chinese five spice and salt evenly, then toss everything on the sheet until well coated and spread in a single layer.
- Roast in the preheated oven for 15–18 minutes, or until the sweet potatoes are tender and the chicken is heated through and slightly crisped at the edges.
- While the hash roasts, warm the contents of the sauce packet in a small saucepan over medium-low heat for about 2 minutes, just until heated through.
- When the pan is done, pour the warmed General Tso’s sauce over the roasted chicken and sweet potato hash. Toss gently to coat all pieces with sauce. Let the dish rest for 2–3 minutes so the sauce can meld with the vegetables.
- Top with sliced green onions before serving. Serve hot as a breakfast bowl, over rice, or with a side of steamed greens.
