When I developed a steak quesadilla recipe, I knew the meal needed salsa and guacamole, but it also needed that signature creamy jalapeño quesadilla sauce. Since Taco Bell doesn’t sell this particular sauce by the bottle, making a homemade copycat is the next best thing.
This version is simple, uses common pantry ingredients, and takes only about five minutes to prepare. It’s rich, tangy, and slightly spicy from pickled jalapeños, and it really elevates any Mexican-style dish you pair it with.

- Sour cream – half of the creamy base for tang and smooth texture.
- Mayonnaise – the other half of the base for richness. If you prefer, you can use all sour cream, though the texture and flavor will be slightly lighter.
- Pickled jalapeños – the key ingredient. Use both the chopped peppers and the pickling juice from the jar for authentic flavor.
- Spices: paprika, ground cumin, garlic powder (or granulated garlic), onion powder (or granulated onion), and chili powder to season the sauce.
- Salt – to taste, about ½ teaspoon is a good starting point.
- Sugar – a small amount (about ½ teaspoon) helps balance the acidity and round out the flavor.
To make a spicy version, stir in ½ teaspoon (or more) of cayenne pepper.

To prepare a basic cheese quesadilla to pair with the sauce:
Heat a large skillet over medium-high heat. Spray one side of a large flour tortilla with cooking spray and place the sprayed side down in the hot skillet. Add about 1 cup shredded Monterey Jack or cheddar cheese to half the tortilla and fold the other half over. Cook 3–4 minutes, flip, and cook another 3–4 minutes until golden and the cheese is melted. Cut into wedges and serve with the quesadilla sauce for dipping.
