- 1 ½ teaspoons salt, divided

- 2 cups zucchini, diced
- 4 cloves garlic, sliced

Stuffed Sheet Pan Chicken Instructions
1. Preheat the oven to 450°F (230°C). Line a sheet pan with parchment paper.
2. Make a pocket in each chicken breast by slicing horizontally through the thickest part, stopping before you cut all the way through.
3. Stuff each breast with about 2 tablespoons of pesto and 2 tablespoons of crumbled goat cheese. Press gently to close.

4. Brush each stuffed breast with 1 tablespoon of melted coconut oil. In a small bowl, combine 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon Italian seasoning, then rub the mixture over each chicken breast.

8. Roast in the preheated oven for 25–30 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and caramelized. Cooking time will vary slightly depending on the thickness of your chicken breasts.

9. Remove from the oven and let rest for 3–5 minutes. Finish with optional grated Parmesan and chopped basil before serving.
